BFD 1,2,3! (A BFD Tutorial)

Hello Hello! How is everything today for you? Well, I hope.

Fortunately, today has been much better than yesterday. I find that when you have a bad day, there really is no reason to dwell on it. Sure, you're entitled to a little time of sorrow, but after that, move on because life is short and so are the days we have to enjoy.

I started my day with some fantastic news. The Phillies have done it once again! Another World Series, another chance at World Championship….whoop whoop!

Obviously this made my Philly phanatic hubby quite thrilled, but if I thought play off time was intense, just wait until the WS games begin. It's a whole different level of intensity then. Oh boy, I can only wait for the exhilaration that is about to take place.

Another delight in my day was the fact that I had packed my all time favorite Sammie to look forward to over lunch. Guys, I've said this before, but I need to say it again, this Sammie is UNBELIEVABLE! I really don't know why, but these particular flavors are divine.

Almond Butter, Pumpkin Butter, Spinach, Apple, and Goat Cheese on a Cinnamon Raisin English muffin

The almond butter is key, the pumpkin butter is key and the cinnamon raisin muffin is key. Everything else, you can play around with. I've tried it with pear which is also fantastic. I've also added avocado or used blue cheese instead of goat. Oh, and you also have to warm it up for a quick 30 seconds to experience the full intensity of amazing flavor.

Well, I did mention yesterday that I had moved our usual Wednesday night BFD to tonight's menu and for good reasoning. Tonight, I wanted to show you all the full BFD experience and needed to enlist the assistance of my gracious hubby to do this. (He was tied up last night)

So without further ado, here is our full recap of what we live for each week….

BFD (Breakfast for Dinner) Podolsky Style

On the BFD menu tonight: His and Hers Fritatas

Hers: Zucchini, Black Bean, Mushroom

His: Bacon Tomato and Cheddar

Step 1: Prep all of your ingredients. You want to do this first because the cooking process is extremely timely. You need to make sure you have everything on hand because once you start to cook the eggs, you are working by the second.

Step 2: Cook your veggies (or meat) in a skillet. Use a small skillet or omelet pan, as you will be using the same pan for the fritata.

(Sammy is ALWAYS in the background. He never misses a golden opportunity to show off his studly physique)

Step 3: Once the veggies (meat) have cooked for about 5 min add the eggs. I beat together 1 egg and 1 egg white for me and 2 eggs and my other yoke for Toly's. I also added the salt, pepper, and cheese to the egg mixture. So, pour the egg mixture over your veggies (meat).

Make sure you coat the entire circumference of the pan and distribute the egg mixture evenly.

Step 4: Place the entire skillet in the oven at 350*.

Cook for about 10 min.
Step 5: After about 10 min, take out the skillet and set your oven to broil. Then, throw the pan back in the oven and broil for about 2 min until the top gets slightly browned.

Step 6: Dress your fritata. I added diced avocado and pineapple salsa to mine

Toly had yellow tomatoes on his

We paired our fritatas with fresh bagels. Pumpernickel with Laughing cow and raspberry jam for me.

Egg bagel with cream cheese and strawberry jam for him.

Step 7: Set a romantic table and savor the aroma of a calming, delicious BFD

I do hope that you all take my advice and give BFD a try. There are many many reasons why this type of dinner benefits your life. It's affordable, it's quick, it's easy, it's yummy.....
And oh yeah.....

It will make your hubby one happy camper!
Bon Appetite!

  6. Sweet and savory sammies are the BEST! I can't get enough of them, seriously. Your frittata idea of putting the whole skillet in the oven--genius!!! That way there's not drama rama with veggies fallin' out everywhere! I'll have to try that!!
