"It's Going to Be a Good Day" He Said

Those were the worlds uttered from my husband this morning and he was indeed correct. I adore a nice relaxed Sunday with absolutely nothing on the agenda and just taking the day as it comes. How often do we get a chance to live like this? So when the opportunity arises, I immediately take it!
We started off our laid back day with our traditional Sunday breakfast together.

I made Apple Cinnamon Raisin French Toast

This really got me thinking about Apple season. I get very excited for the apple craze and count down the days for big Apple Festival in our neck of the woods.

Afterwards, I did the grocery shopping for the week and returned home to start thinking about lunch. Toly and I decided on burgers and proceeded to fire up the grill. I really have to take these beautiful grilling days more seriously and use every chance I get because soon, it will be no more.

My lunch was a beautiful salad topped with a grilled veggie burger. Probably my favorite lunch right now...

Toly worked on his Fantasy Football draft after lunch, so I found it a good opportunity to head to the mall. I haven't been to the mall in ages (mainly because I really don't enjoy shopping) but my sister told me there was some crazy good sales going on and I have been in need of a few updates to the wardrobe.
The trip wasn't a total loss, as it usually is. I left with a few tops (one that I score for $1!) and got the wedding rings cleaned. I have the worst time spending money on clothes. It takes everything I have to buy a shirt for more than $5 but I have no trouble spending $10 for a tiny jar of fancy pumpkin butter. Haha, go figure.
"Dinner was romantic." Another statement made by the hubby today.
I made us individual lasagnas.
Mine was all veggie minus the noddles. (Eggplant, Zucchini, Yellow Squash and Mushroom with spinach)
Toly's was Beef Tortellini and all kinds of cheese.
Served with some delicious vino and bruchetta.

Guess it was kind of romantic. ;)
I am loving the fact that there is another day to this weekend. Tomorrow, we are headed to Baltimore with my family to celebrate my mom's birthday. She turns the big 50 this year, but she if you ask her, she will lie. :) Love you mom, and don't worry one bit, you don't look a day over 29!
What is everyone else doing with the extra day to the weekend?
Whatever you do, hope you enjoy!
Okay, off to end the day with movie and my husband, because apparently, we are having a fantastic and romantic day. ;)
Night guys!
