Working For The Weekend

Today was my Friday and I couldn’t have been more pleased.

I took off tomorrow because we are leaving for Philly for the weekend. It’s going to be a blast, but I’m just a little bummed about the crummy anticipated forecast. Oh well, we shall make the best of it.

I had another really great speed workout this morning with a 3.7 mile run in 30 min! It felt great, but what felt even better was the 10 min core yoga I completed afterwards. Wow, 10 min of hardcore ab yoga is INTENSE! My stomach felt like a rubber band and was on fire after I was done, but I love those kind of quick intense ab mini workouts.

Work was busy but it always is the day before I leave. Just once, I’d like to have a laid back stress free day prior to being out of the office. It just never seems to happen, but oh well, at least it flew by.

Didn’t have time to take a real lunch break, so it had to be consumed at my desk. I brought the leftover Bulgar/Wheatberry salad from last night and bulked it up a bit by adding more fresh spinach and some green beans. I also packed some melon that needs to be consumed before we leave. It’s only got a few days of life left in it, so I’ll be making my way though the last of it over the next two days.


Wow, this was very good last night but about 1000x better the next day. All of the flavors must have absorbed into the grains because it was bursting with taste. I must keep this tasty salad bookmarked in my go to recipes. It was quick, easy and delicious. I have to give major credit to Kath for her inspiration on this one. I saw something similar on her page a while back and decided to re-create a comparable version of my own. Thanks Kath!

I usually don’t post about my afternoon snack because I really don’t care to post every little thing I eat, but just so you all know, I always have something around 3 or 3:30pm. Toly and I workout after work, so I like to have something for fuel about an hour before we lift. 9 out of 10 times, it is fruit, usually an apple, but lately, I’ve noticed that it hasn’t really been sustaining my energy for our workouts. I guess we’ve been getting a little more intense with the lifting so I realized I needed more protein for increased energy. I have been eating Okios with granola as my afternoon snack for the past few days and it has been the perfect fix. Not only is this snack delicious, but it’s so fulfilling and gives me oomph I need.

Today, I satisfied my 3pm snack with some vanilla okios, ½ of a diced plum, and ½ of a kashi granola bar.

So good and it helped me sore through a sweat fest after work.

I pounded out 25 intense min on the ET, and then completed Bobbi's Mini Bootcamp. Love this girl and love this workout.

Then I gave myself a pedi. I contimplated treating myself to a professional job, but I can never bring myself to do it. I really can't justify spending mega bucks on having someone paint my toes, when I know that I can do it just as well. So I don't get the spa treatment, but at least I don't have to reveal my ugly runners feet. (Does anyone else have the worst looking feet from running? Blisters, dry skin, random black and blue toe nails? So gross, right?) Oh well, nothing a little pink paint can't cover up.


I ate dinner by myself tonight because Toly had a volleyball game after work.

All I really wanted was a huge jass salad....so that is what I made....


Grilled eggplant, asparagus, red onion on romaine with cabbage, radish, avacado, and feta. Dressed in a homemade balsalmic/blackberry dijon dressing with white bean basil hummus and pesto.


Pretty much everything good on earth on one enormous plate.

The only thing I wanted with this salad was more fruit. So, more melons were consumed (almost to the end of the tuperware!)



Before I leave, I want to give a MAJOR shout out to my girl Sarah! Her and her boyfriend became engaged yesterday and I couldn’t be happier for her. Love you Sarah! Congrats. :)


Okay friends, I’m out for now. Tomorrow, I plan on sleeping in until 10am. Haha, yeah right. I will be up before 6am for a long run and then packing for the road.

  1. yayyyy for today being both of our Fridays :) :) I see you've been trying to clean out the fridge as well :) Its kind of fun- eating tons of fruits and veggies?? Yes please! Great grilly dinner too

  2. I can never shell out moolah for manis/pedis too...despite my desperate looking feet! I do a swell job painting but it's the calluses from running/exercising that are terrible looking. Still, I haven't had a pedicure in a suuuper long time. My mom didn't have her first pedicure until I bought her a gift certificate for Mother's Day a couple of years ago!! So every time I think about getting one I think of her and how I should paint my own toes!

  7. Aww I'm happy you have friday off! Happy for you, jealous for me though. Haha! Your lunch looks so delicious, too. I have pretty nasty runners feet, but I always wear tennis shoes (or closed toe ones for harp), so I don't care all that much about my toes. I used to when I could wear flip flops, but now I have to wear orthotics all the time cause of my whacked-out feet. Sometimes I'll paint my toes if I'm feeling like it though :)

    I love your grilled veggie salad! I want a grill so much. Have a wonderful time in Philly, love :) I hope you get nice weather!

  10. I love when dishes taste better the next day - makes eating leftovers fun :)
