Short and Sweet

Hey guys!

This is going to be a short and sweet one.

First up, don't forget to enter my POM Wonderful Giveaway that will end on Wednesday at 12am. (In case you missed it, this stuff is AMAZING in Sangria. I highly suggest you run to your kitchen and whip of a batch of summery sangria before the season ends.)

Second, today was crazy again and flew by. I really didn't have a free moment but it was mainly full of hectic work stuff. I'm not sure why this time of year gets insane at my job; maybe because since I work in HR, this time of year is a heavy training period of new associates. We seem to get a numerous amount of college students in the summer months and also our company is rapidly opening new branches left and right. People need to be hired, trained and orientated in the meantime. Even though the new hires and orientation is just a small aspect of what I do, it takes up a significant part of my day when we have a big Orientation class, thus preventing me from getting much else done. Oh well, I will catch up eventually, but I just feel so behind at the moment and I absolutely HATE that feeling.

Toly wanted to Shred again tonight. We stuck to Level 1 again. Not quite ready for Level 2, but he will be soon. (I'm thinking I'll give him a taste this week) I told him if he thinks Level 1 is hard, wait until he sees what Level 3 has in store. Muuahhahahaha! ;)

Working out always works up our appetites. Tonight I made Quesadillas!

Mine was fab.

Roasted Red Pepper, Asparagus, Spinach and Goat Cheese

I also made a delicious and quick black bean, mango, avocado salad. With some Sweet Potato chips for scoopage.

Toly had chicken, tomato and cheese.....


Okay lovelies, that's all I have for today. I will have more for you tomorrow, I promise. Today was just a little much and I'm definitely in need of a little break.

  1. The quesadilla sounds fantastic!

    My husband was soo shocked at how challenging 30 day shred is! He can't believe I torture myself with No More Trouble Zones, which is longer than the 20 minute Shred, haha.

  2. Hey girl :) What a yummy dinner. It all sounds great but I'd really like some of your sweet potato chips after my yucky din din hehe. I agree- raw squash is just not for me! There are so many other delicious/healthy foods I love- not worth the ick factor

  3. Gah I am totally in the same boat...feeling behind. My car is still full of junk and I would unpack it but I have no where to put it since we have company over!

    Do you put your quesadillas in a panini press? Or just a skillet? I'm thinking I need one before I head back to school :) That and a zillion other appliances...

    One good thing about being busy at work ... the day goes by fast! My job is slow this time of year and it can make things go by pretty slow.
