Having a Fruit Baby

I keep thinking today is Friday. I actually had myself convinced that it was Friday when I woke up this morning that I almost skipped my run and went right into cross training instead. (I usually take a break from running on Fridays and do cross training to give my legs a break in preparation for my long runs on Saturday mornings).

After I took a minute to think about it, I realized it was only Thursday. Ugh, don’t you hate when that happens?!?!

Even though this week has been moving along quite quickly, I’m still ready for it to be over. It’s been another heavy week with work and personal affairs, so another little break will be nice.

I’ve been continuing to devour massive amounts of the world’s fruit supply these days. Everything is just so good that I can’t help myself. I know that it is possible to eat too much fruit but I think as long as you are balancing out your other essential nutrients and not replacing it with the other requirements from the food pyramid, then eating a little more than normal is perfectly fine.

I really do try to make sure I am getting an overall balance of everything each day, but when I was packing my lunch last night, I realized that I had an anomalous quantity of fruit in my bag. A big dish of watermelon and cantaloupe, grapes, a peach….

Everything is just so good that I have such a hard time deciding and usually end up taking a little of everything. And lunch isn’t my only problem, lets see, I always have berries with breakfast and a big bowl of frozen fruit before bed. I think I might be having myself a fruit baby in a few months… Anyone else have this problem?

At least I get my fair share of veggies with dinner. Tonight was no exception.

On the menu: Roasted Veggie Mac and Cheese with BBQ Tofu

A little help from Annie’s.

This is my favorite kind…

The white cheddar deluxe is spectacular!

I love to spice it up by adding artichokes, steamed kale and tomatoes.
And roasted veggies…. Broccoli, Kabocha, Eggplant, Peppers

I made Toly BBQ chicken and realized I had a few pieces of leftover tofu to use, so I threw my tofu in some of the BBQ sauce and baked them alongside the chicken.
BBQ with Mac and Cheese is such a lovely combination!
Well, thankfully, tomorrow is actually Friday. Our weekend is looking pretty productive so far. Tomorrow night, I have a girls night with my mom since Toly will be having poker night at our house. Our AC will be installed on Saturday morning. We also have a wedding and a few errands to accomplish. Should be a good dynamic weekend. How about you? Anything exciting planned? Hope your week is winding down nicely.
Have a good one!
