Things Will Look Up Eventually

Thank you all for your kind words and uplifting my spirits on my dismal week. Thankfully, it’s so close to being over.

We just found out that our AC is going to be around $2000 to fix! WTH?!?!?! And work was just awful today. I worked all day on a major report for my VP and then found out it had to be formatted an entirely different way. Ugh, so I spent the entire day working on this and now I am so far behind on other things I need to do. Don't you just hate when that happens? I get so overwhelmed when I feel that I am not meeting my deadlines.

So the hubby and I are in the process of planning (eh, dreaming) of our 2nd honeymoon vacation next Spring. Ideally, we want to go to Italy. This has been a dream of mine for quite some time, and we both feel that this is something we should do now because the opportunity may not be there a few years from now.

We haven’t done much planning or research at this point, only browsed through a few brochures. At first look, I’m not quite sure how this is going to be possible. Holy mula!!!! This trip is way more expensive than I thought.

Granted, I was probably looking at the First Class, Escorted Tours that are for the rich and famous, but regardless, I was still a little overwhelmed.

We really have no idea what we are doing. I know that we need to talk with someone and get a better idea, but has anyone ever been to Italy? Do you have any advice or things we should do/know? Like what time of year is best to go? Should we consider going with a group/tour? What are the best places to visit?

Well, as I was looking through the Italy info over lunch, I managed to snap a quick photo of the meal since it was eaten at the beautiful atmosphere of my desk today. I brought the last of my Carrot Ginger Soup with Kale and ½ of a spectacular sammy. (Slice of pumpernickel-this bread pairs beautifully with this soup btw, white bean hummus, spinach, sprouts, roasted red pepper and cucumber) I also munched on some grapes and carrots for good measure and balance. I enjoyed this lunch very much! It was a nice change up from my usual salad.

I was without my shredding partner tonight. Toly confessed that he would not be able to do it without having AC. Our house is stinkin hot! I cotemplated doing Level 2, but then I realized I needed a walk to clear my head more. Plus, my legs are like lead. I think my body is telling me its time to rest. So, I walked with Sammy for a couple of miles and it felt great!

I got to work on dinner immediately after.

On the menu: Thai Coconut Tofu Stir Fry with Mango

I love using coconut milk in stir fries but I always am looking for ways to use the milk throughout the week once I open it. I only use a little and then I am left with a can of coconut milk in my fridge to use. Does anyone have any suggestions on good recipes for coconut milk?
I was thinking of making muffins and using the coconut milk in the batter???

Veggies are always so impressingly beautiful when they are stir fried....


And the fruit makes it even more pretty.....




Oh, and just so you don’t get worried, Toly had chicken not tofu. But I’m sure you all know by now that anytime I use tofu, Toly will be getting some kind of meat substitute.

This stir fry was magnificent! I love fresh mango in these dishes. For some reason, Toly doesn’t though. He loves fruit almost as much as I do, but he doesn’t like fruit that is cooked. And he only likes his veggies raw too. Hmmm, sounds like a raw enthusiast to me? Oh wait, I forgot about his admiration for deep-fried foods, so I guess the raw diet is out for him. ;)



Toly also had his with rice and no veggies (except edamame, he loves this interesting little soy bean!)

Okay, I’m off to go eat more fruit. Has anyone else been eating massive amounts of fruit these days? I just can’t seem to get enough of it. The way I see it, this ideal time of year when the fruit is this ripe and this sweet must be savored and taken full advantage of! That is why I have no problems eating at much as I possibly can.   1. My parents met me in Italy after my abroad semester and we travelled throughout the country. We started in Milan, then to Venice, Florence, Pisa (just for the leaning tower), and Rome!

    It was super expensive, mostly because of the exchange rate :( As a result, we tried to cut back on food costs and did not spend much on material items. We spent about 2-3 days in M, V, and F and 5 in Rome. It wasn't aaaas enjoyable because we went in the middle of December--the upside to that was way cheaper hotel rates and shorter lines everywhere.

    DEFINITELY pick up Rick Steves' book. It saved our lives a bajillion and one times.

  2. I think I eat my weight in fruit daily ;) Thats awesome that everyone is in the mood for veggie mix tonight! I went the non cook route (cold/raw) but still totally delicious! We are also planning a second honeymoon but maybe in like Jamaica. I hear ya on $$. Europe can be SO expensive!

  3. Would this be your first trip abroad? If so, do a group tour (but a cool one) so you don't have to worry about transport and figuring out what to see on your own.

    Italy is one of THE most expensive places to travel, just fyi.

    So sorry to hear about the AC. Gosh. Can you get a new one for that price? Probably not.

    I LOVE YOUR STIR-FRY!!!!!! I wish I had more fruit around the house because I am ALWAYS craving it. I use to have a bunch of frozen fruits but I finished them off the other day lol.

  5. So sorry about the AC! I hope mine doesn't go out in AZ--that would be awful :(

    I've never even been out of the country (except Canada), so I'm no help with Italy. Sorry! I hope you find some good deals, though. Travel can be so expensive!

    I love your dinner, and I've been eating an abundance of fruit lately, too--especially grapes It's so good!

  8. This the season to eat fruit! With so much beautiful seasonal fruits, it's crazy not to take advantage of it! :-)
    And ITALY!! That's my dream place to be! I do hope you get the chance to visit.
