Wednesday Night BFD Back in Action

I really thought that falling asleep last night would not be an issue, since I made myself get up at 6am and was running around like crazy all day. I was feeling beat mid-afternoon and even skipped the intended nap I had planned, so really I thought a 9pm bedtime sounded doable. Well, sadly my jet lag still lingered and I tossed and turned for a few hours before I finally ended up going downstairs, watched an episode of The Hills, drank a glass of milk, and then finally fell asleep around midnight. Ugh, stupid time difference is kicking my butt. Hopefully I’m cured from it now.

Today was my first day back to work, which is never fun, but it puts my mindset back into the swing of routine. I had many emails and messages to catch up on which made the day move along. The heat wave also broke today, so we are back into the normal spring PA weather of just barely reaching 60’s. Oh well, summer is right around the corner.

I haven’t done strength training in a few days, (I did manage to squeeze in a mini session on vacay) so I knew I was due. I only attempted Level 1 of Jillian’s 30 Day Shred because I didn’t want to over do it. Hopefully tomorrow, Toly and I will get to the gym to lift some real weights, but we’ll see. He hasn’t been feeling the best for the past couple of days so it’s up in the air.

We reconvened our usual Wednesday night BFD this evening with customized frittatas. Toly has deemed this his favorite BFD, but he seems to say that about every BFD, so I’m not really sure if that is accurate.

His frittata included bacon, potato and monty jack cheese…

Mine was kale, mushrooms, sun dried tomatoes, and goat cheese….

Basically a frittata is an open faced omelet that you bake. I first sauté the veggies and add them to the egg mixture. I then pour the egg mixtures into individual large ramekins and bake in the oven for about 15-20 min.

A few more TJ’s products were featured in tonight’s dinner- TJ’s Whole Wheat Cinnamon British Crumpets. I was intrigued when I saw these because they seemed slightly different that the usual English muffin, more fluffy and airy with an abundance of nooks and crannies. They were pleasantly scrumptious. I topped one half with blackberry jam and the other with a KLM inspired combo of brown sugar and cinnamon. And then I remembered I picked up another beautiful condiment with in CA based on the suggestion of Lauren. TJ’s creamed honey. I couldn’t wait any longer to try this one, so I drizzled a teaspoon over the brown sugar and cinnamon half. Mmm, mmm, mmm! What a gorgeous addition. Lauren was right, the creamed honey is on a whole different level than regular honey. Seriously, this tasted just like a cinnamon bun, you have to try this!!! A new favorite for sure!

Okay now I am determined to make it to bed at a reasonable time because I have a feeling if I don’t start getting adequate sleep, my body will punish me for it later!

  2. Seriously Lindsey, you have to try this! I promise you it tastes just like a cinnamon bun but without the guilt.
