Loving Leftovers and Our Favorite BFD

I am officially in love with tofu! My lunch today was a great big salad with an assortment of leftovers and random ingredients from my vegetable drawer. The highlight of this salad, was of course, the leftover Pecan encrusted tofu from last night’s dinner. It also contained various enchantments of roasted broccoli, asparagus, tomatoes, yellow squash, purple cabbage, avocado, cucumber….I think I covered them all.

I think salad may be one of the most miraculous discoveries made by man. Nothing makes me happier than a gigantic bowl of assorted vegetables. (Take that back, a gigantic bowl of oats is pretty darn close!)

A Work of Art

Work today was quite eventful. I am currently working on a project for all associates that will feature messages and insights from our CEO. Today, I had to interview him on his visions of the Credit Union. It was a nice change to be in the CEO’s office chatting with him in the afternoon. (A good way to get over my usually afternoon slump!)

I was happy to be home this evening with another free night. Tonight’s BFD was greatly anticipated because we had to miss last week. I resorted to our favorite…Egg Sammies and homefries!

Scrambled egg whites

On Pumpernickel bread with a smear of goat cheese and a little pumpkin butter! Fabulous.

I also made a quick fruit salad which contained blackberries, kiwi, and nectarine.

I think having breakfast for dinner weekly has been a key foundation in our marriage! J We LOVE it!

Okay on to see the results from American Idol. I have my vote for who will be going home but we’ll see if I am right! :)

  4. It's in Allentown PA. I am not sure how far that is from Harrisburg but Allentown is about 40 minutes outside of Philidelphia. I have never been to Harrisburg, but my roommate from college live in Philly, so my husband and I visit there a lot. Have a great weekend! -Cat
