Coconut Tofu

Good evening all! Hope your Tuesday was superb. Mine was quite lovely and even though it was a bit on the chilly side, the sun was shinning bright and beautifully. My mom met me at my work for a nice walk over my lunch break. It was good to see her again and catch up since they had just returned from their cruise the day before. And look at what presents they brought me back!!!PURE MEXICAN VANILLA AND REAL COSTARICAN Coffee! This stuff is the real thing people. I could smell the coffe all day from the bag under my desk....it was heaven! I can not wait to try these delecacies. Thanks mom and dad! :)

I've been looking forward to tonight's dinner all week and bonus....it included this week's superfood. I made Coconot Tofu!

I have a great recipe for coconut shrimp that I make often and after my new found love for tofu I knew I had to give this a try. I basically just used my method for the shrimp and subbed tofu. I seasoned the tofu with salt, pepper, and crushed red pepper, dipped in egg white and coated in organic unsweetened coconut. I then pan seared it for a few min. to enduce browning and then threw the skillet in the oven to finish cooking.

It was perfect! I did the same thing for Toly's chicken and also made the Strawberry Pomegranted Syrup that Lesley made last night for dipping. (http://lborger.blogspot.com/feeds/posts/default)
The sauce was wonderful and such a great accompaniment with the tofu. Thanks Lesley for this great idea! :)

    The gifts from your parents sound awesome. I am totally addicted to coffee, and I bet costa rican coffee is amazing!

    And, yeah, the coconut part sounds VERY good ... lately I'm really lovin' me some coconut for some reason, haha.
