Friday Fiesta

Greetings all and Happy Friday to you! Wow, this week was a killer but thankfully it’s over now. We do have something noteworthy planned but I can’t reveal what it is quite yet because it’s a surprise and I don’t want to be the one to spill the beans. I’ll fill you in later!

Moving right along, today went by rather quickly. After a loooonnngg meeting in the morning, I had an event to do in the afternoon which took up the remainder of the day. I had to teach a 1st grade class on some money lessons which was such a treat! Being around a bunch of happy-go-lucky 6 year olds, was just what I needed to end my exhausting work week.

After work I was on my way home and getting ready to go to the gym like I do every day, but then realized that I am swapping my long-distance run for tomorrow morning rather than Sunday. I don't have my ZUMBA class tomorrow and since we will be coming home very late tomorrow night, I figure I would rather take Sunday as my complete rest day. So anyways, I decided to forgo the gym today being that there would not be enough time for my muscles to recover if I plan on doing another 6 or 6.5 miles tomorrow morning.

Toly and I took advantage of the warmer weather and enjoyed a nice long walk with Sammy instead. It was wonderful spending some time talking with him and getting some fresh air!

Dinner tonight was a Mexican theme. (We call our Friday night dinner "theme" night dinners because its usually something ethnic for some reason) I made some colorful taco salads with all the fixins'. Mine was a little more vegetarian than his, but they both turned out wonderful.
Here is how I make my version of taco salad....

Taco Salad

Meat/Veggie Mixture
  • 1/4 lb. ground turkey breast (mainly for the boy)
  • 1/2 zucchini sliced (mainly for me)
  • Pamlful of cumin and chili powder (adjust to your spicy liking, we like ours with a little more kick)
  • Sprinkle of oregano
  • salt and pepper
  • splash of water

Saute the zucchini in a sprayed skilled until slightly tender. Add turkey breast and seasonings and cook until turkey is no longer pink. Add a splash of water and cook over medium heat for a few minutes until it gets a little thick and saucy.

Salad and Fixings

  • Shredded romaine
  • purple cabbage
  • shredded carrot
  • corn, black beans, avocado, olives
  • Tomato

Homemade Tortilla Strips

To make these I cut up a ww tortilla into strips, sprayed with some EVOO and sprinkled with cumin and chili powder. Then bake at 450* for 10 min until crispy.

Well the couch is calling my name. Time to get read for Friday Night Lights and a big bowl of ice cream with my man. Seriously, what could be a more satisfying way to end the week?
