Pizza and S'mores on a Friday Night


It's Saturday afternoon.  I'm sitting in my favorite coffee shop, sipping a Soy Chai Latte listening to Damien Rice on Pandora.  It's a good day! 

Yes, this might be what is going on today, but I still have yet to reveal the occurrences of yesterday.  

Let's start from there….

~~~~FRIDAY~~~~~

It was nothing short of a normal morning.  I realized it had been awhile since I treated myself to waffles for breakfast and remembered about the Blueberry Kashi waffles that were hiding in the freezer door. 

2 Kashi Blueberry Waffles, Banana Peanut Butter, Banana, Blueberries, Nuts About Granola Plain Jane Granola, Agave

I paired these lovely waffles with the pleasant combination of cantaloupe and cottage cheese.



Waffles on a Friday morning are a beautiful thing.

 

When I got to work, I realized quickly that it was going to be a quiet day in the office.  Many people took advantage of the three day weekend and took Friday off to extend it.  

I had a few meetings in the morning and then met up with my friend Jess for lunch. 

We met at Juice and Java (which is coincidently where I happen to be as I'm writing this, and even more coincidently, in the exact same spot).

Avocado Citrus Salad with Grilled Salmon 

This salad was amazing!  It reminded me of a spa lunch and I will definitely be recreating it in the near future. 

After a wonderful lunch and visit with Jess, I went back to finish the work day. 

Once 4pm hit, I made my way over the gym to hang out for a few hours. 

I played around on the treadmill and stair climber to kill some time before Body Attack.  I use to take the 5pm Body Attack class on Friday nights more frequently, but haven't taken it for quite some time.  I almost forgot about it. 

Even though I was feeling pretty tired, I still had some time to waste before I had to be at Jen's so I decided to stay for the class and got in a great workout. 

Finally, it was time to head over to Jen's for a much needed girl's night!  

I am usually in charge of the wine for girls nights but I completely forgot this time.  No worries, Jen had some champagne on hand so we made do with mimosa's. 


For dinner, we decided to do a Make Your Own Pizza Night!!  

Jen prepared all of the fixings ahead of time. 


As well as a beautiful salad. 


My pizza was a beautiful creation of everything.  I once told Jen about how amazing hummus was cooked on pizza and she has been a fan ever since.  If you haven't tried it yet, do so.  I'm telling you it's fantastic! 


We enjoyed our salads and after a few minutes, the pizza's were ready. 


Earlier in the week, Jen asked me if I had any ideas for dessert.  I instantly remembered about the S'more's Pie that Jessica posted last week and sent it to her. 


Jen agreed that it looked out of this world incredible and decided to whip one up. 


Oh man, Jessica wasn't kidding.  This pie deserves an AMEN!  


If you like s'mores (who doesn't?) you will LOVE this pie. 


As usual, dessert did me in.  I left feeling tired, full, and loved, just the way every girls night ends. ;) 



Today has been nice but I'll share that tomorrow.  Tonight, we are headed to El Sol for some amazing Mexican food with my parents.  Since we're getting ready to move out and into the new house, we wanted to do something nice and take them out to celebrate.  Although, I'm pretty sure we owe them a few mexican dinners for everything they've given us over the past 4 months. ;)

  2. What a nice Friday! The lunch salad (Avocado Citrus Salad with Grilled Salmon) looks amazing! Definitely spa worthy. And (as you know) I <3 attack! I've been back taking it low impact and its wonderful! What a great girls night. From the pizza to the salad to the dessert(!!)- fabulous. Enjoy Mexican tonight! We're going out to dinner as well
