No Room In My Belly

Hey everyone!

Can you believe the weekend is over already?  I know that weekends naturally go by fast but this one felt like it didn't even really happen.  I guess it was that good!

I woke up early again tossing and turning and thinking.  It's been hard for me to get a good night's rest at my parents house.  I think its the combination of an old bed, cold room and crowded quarters.  The bed we have now is a double and we are use to our queen.  Oh how I miss my bed!  I can't wait to have that back soon.  I've also not been sleeping well because I have so much on my mind.

Up early and thinking about what to make for breakfast, I was suddenly inspired when Jack Johnson spoke to me on Pandora.

"I'll make you banana pancakes, pretend like its the weekend."

It happened to be the weekend so no need to pretend.  The banana pancakes were a brilliant idea.  Thanks JJ!

Banana Pancakes topped with Chobani, Banana PB, Banana Slices and Plain Jane Granola

These were some of the best strawberries I've had all year.  We picked them up yesterday and I'm guessing they are especially good because of Valentines Day.  When we walked in, the store was flooded with a sea of red strawberries.

This breakfast was everything a Sunday Morning Breakfast should be.  Hearty, comforting, and incredibly delicious!

I went to the gym shortly after and decided to do some cardio.  I know that Sunday's are usually my day off from cardio, but I skipped a workout yesterday and Body Pump was cancelled due to some Zumba workshop that was going on in the class room.

I ran 5 miles and started to feel a little nauseous by mile 3.  I don't think I allowed enough time in between a huge plate of pancakes and sprinting an 8:30 min. mile.  Lessons learned.

Regardless, I finished and didn't throw up and followed this with 20 min of lifting.  Ugh, this was the first I've lifted on my own in months and I was reminded how much I don't like lifting by myself.  Thank goodness for Body Pump!

After a productive gym visit and a productive store visit, I came home, showered and put together lunch for Toly and me.

After such a carb heavy breakfast, I craved veggies for lunch.

I roasted a blend of brussels sprouts, squash, and asparagus and topped this on the leftover salad from last night.  I added some cottage cheese and a slice of bread with hummus.  I'm noticing that as much as my mind loves big plates of veggies, my belly doesn't always feel the same way, so it helps to pair all of the vegetables with a carbohydrate.  It's supposed to help me break down the fiber better.

I couldn't even finish the salad, I was so stuffed.  I don't think I'll ever learn that my body just can't handle as much fiber as I think it can.

So after this overloaded fibrous lunch, you would assume I would take it easy on the vegs for dinner right?

Wrong!

I told Toly I was going to make fajitas for dinner and when dinner time rolled around, he asked if I was still making them.

Even though I really wasn't hungry for them, I knew how much he wanted them.  Plus, I don't think I would ever turn down a mexican meal, no matter how stuffed I may be.

I whipped up a Pineapple Veggie Fajita for myself.

While I was making them, I also prepared a black bean and mango salad for lunch tomorrow and decided to try a little with dinner.

This turned out to be a fantastic meal but I could only eat about half.  I'm not sure what is going on with my stomach these days, but I'm noticing I'm just not nearly as hungry as I usually am.  I'm hoping it's just a phase.  Maybe stress has something to do with it?  It's not that I feel bad after I eat, I just fill up so quick and I can't finish any of my meals (which is very unlike me!)

Maybe I'll try to sooth everything with some fro yo tonight.  Fro Yo always makes everything feel better. :)

This week is going to be CRAZY!!  It's a HUGE week for the house.  I can't wait! :)

<3 to everyone!

  1. I love that Jack Johnson spoke to you! ;) As much as I adore huge plates of veggies, the fiber definitely takes a toll on my stomach as well. There is such a thing as too much fiber, as tons of veggies can put you over your limit. I also noticed that pairing veggies with carbs or even healthy fats like olive oil, help them digest better. If I had it my way there would be no limit to the amount of veggies I could eat, unfortunately my tummy hasn't gotten the memo! Enjoy your Vday!

  2. Your food looks so good today!!! I had pancakes for breakfast, mexican for lunch, and a huge salad for dinner - I swear we were on the same wave length!

I can't eat a bunch of veggies without a carb anymore either. I've found that my stomach really hates me when I do that. For that reason, I always try to have a carb or a starchy vegetable (potato) with every meal.

  3. Ohh my.. I have just started liking beans so I think I will try that black bean and mango salad. I've been trying to switch up my lunches lately. Wraps, sammies, and salads get old after a while!
I totally go overboard on veggies like you! At dinner I usually have a massive plate of veggies and then I have to walk around or something to get it all that fiber digested! I'm going to try pairing it with bread so that maybe I will get satisfied before I eat 5 lbs. of veggies!

  4. Those pancakes look amazing! I get those days where I get filled up so fast. I think they balance out the days that I just want to eat everything in sight. ;-)

And I always sing that Jack johnson song when I make pancakes :) Pump does make lifting so much more fun! I taught this morning for the first time since finding out I was pregnant! Felt FABULOUS. I missed my Monday morning class!
