The Next BIG Thing Is In Sight



It's the middle of what seems to be a long week.  Truth be told, all of the weeks seem long these days.  I guess when you are anxiously waiting for something BIG to happen, time slows down.  

What is that BIG thing you ask?  

In the next few weeks, Toly and I will finally be moving in to our new home.  That's right guys, it's almost done!! :)  I can't wait to show you.  We still don't have our exact move in date yet but we have a good idea and it's right around the corner. 

Today's breakfast brought me right back to hopes of warm weather being right around the corner as well. 

Tropical Overnight Oats: 1/4 C Oats with Pineapple Chobani (overnight), Frozen Mango (thawed), Pom Seeds, Granola, Coconut Butter, Granola 



I can always dream of summer, and validly attempt to live it through breakfast.

I had some meetings/appointments during the morning and in between found a little window to run home for lunch.

At the time, this salad rocked my day.

 Spinach, Romaine, Tomatoes, Beets, Roasted Zucchini, Broccoli and Mushrooms, Kim's Spinach and Feta Pretzel (cut into croutons), Basil Balsamic Dressing, Tomato Chutney 



Yes, this salad was a fantastic idea.  I managed to polish it off and then felt terrible for the rest of the day.  I think it was just too much fiber.  I'm really learning that my body doesn't accept the amount of fiber I shove into it.  I wish this wasn't so, but it is and I need to be sensitive to that.  Too many veggies is not always a good thing.

After work, I was going to go to the gym but I really wasn't feeling well.  I almost talked myself into it and then I thought, is this my mental conscious or my physical conscious talking to me?  I assessed the situation: I've been really tired all week and not sleeping well, my legs were heavy and my muscles were super tight, my stomach was in knots, and I had little energy.  This led to me decide that a run was not my best option and I have to say, I'm really happy I listened to myself.  Sometimes it's not worth it to go into a workout 1/2 a**ed when you know you can perform twice as good the next day.

I felt good about my decision and headed home to get ready for date night with Toly.

We decided to go for Thai tonight. (I know I just had it a few days ago, but who puts rules on how much Thai you should have in a week?)

We also decided (last minute) to bring a bottle of wine.

 Oh boy, Trader Joe's makes some dangerous wine!  Why is it so good?  Why is it so cheap?  Why is it so easy to finish the bottle without even realizing it?

Toly and I split the Spring Rolls to start….

I was still feeling a little "full" from lunch, so I only had one but it was delicious.

For my entree, I tried to keep it light by ordering the Steamed Mixed Veggies with Tofu and Brown Rice.



The brown rice here is amazing!! It's homemade, nutty, and extremely flavorful.


My only upset about dinner was that I forgot to ask for steamed tofu.  I can never get into fried tofu.  To me, it just tastes chewy and not at all enjoyable.  It's a texture thing.  I still ate it though. 

What a great date night.  Now, I'm back at home, nestled in my bed, ready for sleep.  After 2 big glasses of wine and a belly full of Thai, it's safe to assume I'll finally be getting that good nights sleep.

    As for the fiber, the exact same thing happened to me yesterday after a lunch of sweet potato, beans, brussel sprouts, and an apple. It was terrible. So sad though...I love my veggies!

  3. I'm sorry you weren't feeling well this afternoon - my body doesn't accept all the fiber I give it either. One thing that helps me at lunch time is pairing veggies with a carb. That way the bread can absorb some of the acidity that I eat. It has been working out nicely!

  7. Your breakfast sounds amazing! And I heart roasted veggies on salads!!

    I SO wish our grocery stores here could sell wine!! We have a TJ's but it doesn't sell wine because of the TN liquor laws, but I made a recent trip to Atlanta and stocked up on the 2 buck while while I was there, I agree, very dangerous stuff, it's SO good!!

  9. Way to go listening to your body! I have the hardest time doing that as well! I also have to remind myself not to eat too many vegetables at a time, which I hate, but I am getting better at that one. :) xoxo

  12. Your oats look delicious! I am loving on some tropical fruit right now...anything to trick my mind into thinking winter is over!

    I am the same way when it comes to fiber at my meals. I hate that bloated feeling that seems to last the rest of the day! :(

    So glad you listened to your body about your workout. If I had been more in tune with mine, I might have realized I was getting sick and prepared for it rather than letting it knock my feet out from under me!
