Bring Your Wife To Work Day

Hello!!

Yesterday kind of came and went and without even realizing, I didn't stop to take the time to document anything.  My bad.

It wasn't all that exciting expect for dinner.  We went over to my sister's house for a soup and salad meal and then played all night with my adorable nephew.  It was wonderful and I'm sad I didn't take any pictures because he is one beautiful baby.

Today, I did remember to document.

We experienced spring like temps today which felt AH-MA-ZING for the middle of February.  I get a little over excited with unseasonably pleasant weather and decided to keep the feeling going with a tropical breakfast.

Mango Overnight Oats with Kashi Go Lean Crunch, Blackberries, White Coconut Wonderful/Coconut Butter melted on top

I pulled out an old favorite with a slice of whole wheat toast, cottage cheese and apricot jam.  Adore!

I had the unusual pleasure of working with Toly today.  Well, not really.  I had a meeting at one of our branches which is on the base that he works.  After I finished, I met up with him and hung out in his office for awhile before lunch.

We waited a little while visiting some of his co-workers before our sushi date lunch.

I love lunch dates with this guy.

Especially when they involve sushi.

We decided to split a few rolls in a lunch special.  Since Toly doesn't like the soup or salad, I get both!

Rolls were fantastic!

 Tuna, Cucumber, California

Rainforest Roll

Crab, Mango, Avocado, Cucumber

The above roll is one of my favorites.  It is so light and refreshing and perfect for lunch.

I got back to work with a heavy work load to finish for the afternoon.  It actually made the rest of the day fly by and before I knew it, the day was coming to a close.

When I left work, I knew I should probably skip the gym and move my run outdoors because of the incredible weather, but that didn't happen.  I think my addiction to Ellen is preventing me from running outside.  I am so spoiled with my own little personal TV on the treadmill I use at the gym and this is really the only time I ever watch TV.  I really look forward to this part of my day and I know it's going to change in a few weeks when we move so I'm soaking it up while I can.

I put in an easy 5 miles.  My legs are still feeling pretty worn out from the long run and speed/hill work I've been doing this week, so I wanted to keep an nice easy pace tonight.

I didn't get home until later tonight because we needed to meet with our builder so by the time I walked in the door, I was very hungry and in no mood to cook.

I thought it would be the perfect opportunity to eat what I really craved….cold cereal!

Confession: I crave cereal for dinner a lot, but I wouldn't be the best wife if all I served was Cheerios to my hard working hubby.  When I was in college, I use to eat cereal for breakfast and dinner at least 3 times a week.

So tonight's dinner brought back memories of the college years.

Tasty Tip: If you add a little peanut butter to your cereal, it turns the milk creamy and gives it a distinct peanuty taste.  It's rather incredible really.

Because this would not be enough to sustain a dinner, I also ate an English Muffin.  One 1/2 with cream cheese and jam and the other with Mighty Maple and Banana.

Truth: I LOVE eating cereal for dinner.

Thank goodness tomorrow is Friday!  I have a 3 day weekend to look forward to as well.  :)

Question: What is your go-to dinner when you don't feel like cooking? For me, it's usually breakfast.  Eggs or cereal or oatmeal.

  4. I have a 3 day weekend too! I'm so excited. That sushi lunch you documented makes me so happy because I'm getting sushi for dinner tomorrow. The Husband always does pizza on Friday nights, and I usually make my own at home, but I have been craving sushi all week. I can't wait!!

  5. TV keeps me indoors too! I love watching Paula Deen and Basketball on Saturdays and I kinda don't want to utilize the nice weather this weekend. Eek..I need to or this outdoor marathon is gonna kick my butt.

When I don't want to cook I turn to canned soup and a cheese sandwich.

  8. I can totally relate - I love running on the treadmill in the morning only because I can get in my daily fix of Regis and Kelly at the same time :)

And sushi dates are always the best - I love the ginger dressing they put on the salads - I need to find the recipe! :)

  9. Cereal! Definitely cereal! My hubby and I go threw a box/bag of cereal in less than a week. It's a bit out of control, really!

  15. Your sushi looks good! I haven't had a good sushi night in a while.

I usually turn to breakfast or sandwiches if I am not in the mood or pressed for time with cooking. Loved your dinner. I too could eat cereal for dinner. The husband is not a cereal person so we usually do eggs and such.

  16. That's great that you two got to have lunch together. :) I live right by PA, and I've been loving the unseasonably wonderful weather too!

  17. Haha, but you still need to cook the eggs and oatmeal! I am so much more lazy in that when I don't feel like cooking, I literally don't cook. I just get bread from the bakery and eat that with fruit and nuts. :-)

  18. I've been loving the weather we've been blessed with in PA too! It's kind of cold today but it was nice while it lasted.

Since I've been back at school I've been eating oats for dinner a lot. Or canned soup. And sometimes I do what Sophia does and make a meal out of bread, nuts, and hummus!

  19. I love getting the chance to visit my husband in his office and go to lunch with him! I do that with the baby every other month or so. The baby loves to visit Daddy in the office :)
