We've Been Hit



We've been hit!  

Toly has become the poor victim of a viscous stomach virus.  I knew it had been going around since Christmas and somehow, he picked it up along the way. 

The poor guy has been throwing up for 15 hours straight.  I feel so bad but I don't know what to do to help him.  I guess it's just one of those rest/fluid and wait it out kind of things.  

As bad as I feel, I'm also quite paranoid at this point.  The lysol has come out hard core in a last chance effort to disinfect any thing I can possibly think of.  I think I may be sleeping on the couch tonight. 

Even though Toly was not going to work, I still had to. 

Breakfast of choice: Yogurt and Fruit



 So funny thing about the yogurt, it was NOT my usual Greek Yogurt rather a regular/lite variety.  What I was really in search for was Chobani Pineapple Yogurt to satisfy a major craving that I've had for this flavor for weeks but when I got to the store, the shelves were completely bare from Chobani.  Totally annoyed, I didn't want to loose all hope.  I spotted the Dannon Pineapple Coconut flavor next and thought, well this has to be the next best thing.  WRONG!!  It tasted like aspirin.  I used to eat dannon lite n' fit yogurt almost every day and now I can't stand the stuff.  It's true what they say, once you go Greek you never go back!

The rest of breakfast was 1/2 a Whole Wheat English Muffin with Almond Butter and 1/2 a mashed banana.


The strawberries just made the plate look prettier.  But of course, I ate them too. ;)


After a dentist appointment, some meetings and a few phone calls, lunch was finally eaten around 1pm.

Lunch: Leftover Butternut Squash and Black Bean Salad


When I got home, I knew I would be on my own for dinner tonight.  Perfect occasion to pull out my block of tempeh.
I really do love tempeh.  Probably even more than I love tofu.  This TJ's brand is top on my list.

For the tempeh I was feeling a sweet/savory sauce.  Somehow I came up with this one on my own:

Cranberry Orange Chipotle Sauce

  •  2 TBL Cranberry Orange Relish
  • 1 TBL Chipotle Sauce (Tastefully Simple) 
  • 2 TBL Orange Juice
  • 1 tsp Garlic
  • 1 tsp brown sugar
  • 1 TBL Fig Balsamic
Place all ingredients into a small saucepan and bring to a boil. Reduce heat and simmer for about 10 min.
 



Place your cubed tempeh into the sauce to coat….


Spread onto a baking sheet and bake at 400 for 20 min…..


Oh wow!  Finger licking good!


For the rest of my meal, I made a Pecan Garlic Rice Pilaf and added dried cranberries and spinach.  I also roasted some Brussels sprouts and asparagus and added a touch of goat cheese to the finished bowl.

This meal was phenomenal!  I've almost forgotten how good I was at coming up with these things on a whim. 

This probably would have been enough, but I've been looking for reasons to try this new product. 


I toasted 1/2 a slice of bread and added a smear of laughing cow and the fig butter. 


If you have seen this Fig and Walnut Butter before but have not tried it, do yourself a favor.  It's exceptional! Seriously good stuff.

The whole dinner was a hit.  Oh how I've missed my cooking creations. :)


And now I must tend to my sick one.  Hope you all are enjoying the week!

    Hope Toly feels better! :-) I remember in college almost all of my roommates got this nasty virus and one of my roommates and I Lysol'ed the crap out of our stuff and thankfully we never caught it.

  10. Poor Toly! I hope he feels better. Ughhh tummy bugs are the worst! I bet you're an awesome nurse though :) I agree- light n fit makes me ill now. I either get Greek or Publix brand. I wish I was a tempeh fan...I just can't do the texture. But Fig and Walnut butter? That sounds amazing

  11. Oh no! Poor Toly! I hope he feels better soon. I hate the stomach flu it's the worst. Your breakfast with the english muffin and mashed banana with some almond butter is definitely something I need to try ASAP

  14. Ahh I hope Toly feels better and that you get lucky and evade the bug!! I've been feeling cold-ish for awhile now and JUST got my sneezes and sniffles...my dad and BF were sick one right after the other and I don't think my immune system could handle the double wammy. Drink lots of water, get lots of sleep, and keep up the usual fruits and veggies!!
