Being Creative, Being Decisive



It's been a fabulous day, has it not? 

For some reason, I couldn't sleep very well last night or this morning.  I woke up at 6am and couldn't get myself back to sleep. 

I waited for about 2 hours until I started breakfast and than I could take it no longer. 

Today, nothing really stood out as to what to make.  I usually have an idea of what big breakfast I will make for Sunday by Tuesday, but after being sick all week, I haven't put any thought into my future meals. 

After perusing the fridge for a few minutes, something hit me.  French toast!  I haven't had french toast in ages and it sounded so good. 

Well, there was no bread for french toast.  Epic fail, right?  WRONG!  

When the odds are against you, avert to the unordinary. 

Apple Cinnamon Waffle French Toast

2 Van's multigran waffles cooked frech toast style with vanilla chobani, sauteed cinnamon apples and walnuts


This worked so well!  I've seen others use waffles for french toast but this is a first for me.  It won't be a last.

Okay, although mine was pretty creative and delish, I have to say, I give myself major props for coming up with Toly's today.

The Mock McGriddle

 2 eggos cooked french toast style, scrambled egg, ham and cheese

I was going to make him an egg sammie but this just came to me on a whim.  He seemed to love it. 

After breakfast I hit the gym and with some time before class, I ran another 2 miles on the treadmill.  

Body Pump was fantastic as usual.  My shoulders were screaming today but it hurts so good. 

Once class was over, I hurried home, showered and got ready to run some errands with Toly.  We did a little furniture shopping and came out with a sofa and love seat.  Score! 

Shopping was fun but we definitely worked up an appetite and Panera was staring us in the face. 

 You Pick 2: Thai Chicken Salad (minus the chicken) Broccoli Cheddar Soup

This was Panera's new salad and I have to say, I enjoyed it very much.  But what I really wanted was that soup.  I've been craving Panera's Broccoli soup like mad so this really hit the spot. 


The rest of the afternoon, we did some MAJOR home shopping.  Picking out tile, paint, light fixtures, blinds.  It was crazy how decisive we were being but then we don't really have much time left so the decisions are getting easier.

I'm really happy about the colors we choose.  An almond color for the house, an iced mocha for the bedroom and a dark slate gray for the dining room.  I can't wait to show you!!

Now, on to a big announcement. And by big, I mean this is HUGE!

LOVES GREEK YOGURT!!

Haha, okay if you don't know the story about our his history with Greek yogurt, I'll have to tell you sometime, but let's just say I tried to trick him into eating plain greek yogurt before and he almost puked and then divorced me for feeding him something so putrid.

We don't even talk about the incident anymore, so I almost fell to the floor when he told me that he wanted to try flavored greek yogurt.

Apparently, "everyone's eating it" he said.

So now he must too.

 Amy's No Cheese Roasted Veggie Pizza

This is probably the BEST frozen pizza I've ever had and probably the only one you will ever find that is cheeseless.  I added a bit more veggies, a touch of goat cheese and a light drizzle of honey. 

I also made a side salad.


Pizza and salad dinners are some of my favorite.


Now we're getting ready to watch The Social Network.  I've heard good things so I'm excited to see it. 

So this weekend may be over for most, but for me, I'm blessed with one more day!  We have off work tomorrow and I have big plans to celebrate with breakfast at The Hershey Pantry and then a run to Trader Joes.  Now that is a holiday.

  3. I love how Toly jumped on the greek yogurt band wagon! So funny! I proudly ate greek yogurt for 3-4 years before anyone else. :)

    Those paint colors sound so awesome! I can't wait to see them!

  4. owww Hershey's pantry? Baked oatmeal here you come! Sounds like another super day. You guys are getting everything ready for the house- how exciting! I haven't been to Panera in a while, but they have fabulous soups. I really want to try that Amy's people. I've heard several people say its wonderful. Enjoy the movie

  6. It's really great that Toly now likes greek yogurt! My husband tried it once but he didn't care for the tangy taste. That's okay...more for me to eat : ) Well I do have to share it with the kids : )

    It took me a while to get used to Greek yogurt too and now I love it!

  10. I love you and your creativity! It's always nice to see another way of doing things, right? Remember when I made French toast using crumpets? It's such a special little treat! Ohhh and when I was reading about Toly's sandwich.. does he like syrup? I imagine it would be really good because I know ham gets smoked with honey some times, and I know the eggs and maple syrup go really well together. I bet it would be yummy :D And that is so funny about him liking Greek yogurt now. I seriously laughed out loud when I read that paragraph. I wonder if he would like the pineapple Chobani (that one is my favorite).

    I'm so excited about the house!!!!! I can't wait to see it, and I can't wait till you move in and all of these moments you will have at the new place :) I'm so happy for you, love!

    hope you liked the social network - abe and i just watched the DVD documentary, which was almost as long as the movie! but it was very good, very thorough
