Business Lunch


This post is going to be pretty lame, and I do apologize upfront, but the highlight of my day was not recorded for various reasons so you'll just be seeing the basics. 

Breakfast was something you are all use to seeing by now I'm sure. 

1 small pear, 1/4 Cup Bob's Red Mill Apple Cinnamon Oats, A few Kashi Harvest nuggets, Vanilla Chobani, Cinnamon Raisin PB, Granola Sprinkle 


I ran out of my Bob's Red Mill Oats today so maybe you'll be getting a different variation of this breakfast soon.  Maybe not, we'll see.

Okay, so the high light of my day was having lunch at such an incredible restaurant. I had a meeting in Hershey this morning and afterwards, was invited to lunch with one of our Senior VP's and my co-worker.  He took us to a fancy upscale country club that overlooked the most gorgeous views of Hershey.  The atmosphere was inviting with warm fires in all corners, king sized cushioned chairs, bottles of wine on the table, definitely my kind of place.

To eat, I had the Grilled Butternut Squash and Pear Salad with a Maple Vinaigrette with the soup of the day, Manhattan Seafood Chowder.  And if that doesn't sound good enough, he insisted we order dessert because this place had some of the best dessert he knew of.  Twist my arm!!!

I chose the Grilled Zucchini and Apple Bread in a carmel sauce.  Holy amazing!!!

What a fantastic lunch and a even more wonderful job I have.  I really do feel so lucky to work for such a great company with some of the most down to earth and humble people.  This weekend, we are having our annual Holiday Gala and I can't wait!  They put on such a nice to do every year for the employees and it's a fantastic way to celebrate Christmas.

When I got home from the gym, my mom had dinner on the table.

Dijon Baked Tilapia, Rice Medley from Trader Joe's, Asparagus 

I'm finally relaxing and getting ready for the weekend.  It should be fantastic!

  2. Wow that tilapia looks delish! I am no chef, therefore I just plop it in the oven for about 30 minutes, but I need to find this dijon recipe. Glad you had a wonderful day :)
