Overloaded on Fitness


Hey guys!! 

I'm back.  I survived, but barely. 

The AAAI/ISMA Conference in Baltimore this past weekend was a blast.  I learned more in 2 days than I have my entire life.  Although, I must admit, the test was HARD!!!  Basically, we all spent 2 straight days in back to back lectures on anatomy, kinesiology, energy systems and more.  And then, yesterday evening, after hours and hours of information overload, we were given a 100 question test (think college final material).  We were also required to do a "practical" which meant half way through your written exam, they pull you out to perform a routine in front of a panel of judges.  

I was so drained after the whole thing, but I'm staying optimistic.  I think I did okay, I think I passed, but I won't find out for 3-4 weeks when they mail us the scores.  If by chance I didn't pass, I can always take the test again for a fee without attending the actual conference, so it wouldn't be the end of the world. (Well maybe just my world) 

Anyways, aside from the grueling material, I still had a great time and met so many wonderful people.  I can't wait to be able to start to use some of this knowledge and help others! 

Today, I got right back into the swing of things starting with breakfast.  

Although, I'll admit, the motivation to get right into that swing came from a new little jem I picked up at Whole Foods this weekend. 



Guys, I have been looking for the Artisana Coconut Butter for years!  Okay, maybe not years, but it sure felt like it.  I love the oil but I've heard the butter is something in and of itself.  Luckily, the Whole Foods in Baltimore was my saving grace. 


Even though I wanted to just eat a bowl of butter for breakfast, I decided to be more practical and make a bowl of Banana Oats with berries, 1/2 a nectarine, and some yogurt.  The coconut butter was an incredible little accent though. 


Whenever I am apart from these breakfasts for a day or two, I realize how much they are missed! 

I had to run to the grocery store over lunch since I didn't get a chance this weekend and we had no staples in the house (ie, vegetables or fruit!).  Can you imagine my life without these things?  I certainly can't so I prioritized, deciding to pick up lunch at the store. 

I thought of getting a salad but it was so cold and rainy out that all I wanted was something warm.  The Kashi Frozen meals happened to be on sale and even though I tend not to buy any frozen entree, this Kashi Mayan Harvest Bake happens to be my favorite.  Plantains, Amarth, Sweet Potatoes, Kale, Black Beans, Pumpkin Seeds.  I couldn't have put these things better together myself. 


For some reason, these little trays never seem to be enough.  I mean they are, but they never look like they are, so I always bulk them up with baby spinach.  If anything, it makes it look more visually appealing. 


 After work, I went right to the gym to get in a little running.  Treadmill here is still broken and with my 1/2 marathon this weekend, I need to be able to get in a few short runs this week or else my legs will go into shock on Saturday.

When I got home, cleaned up, took care of some things around the house, it was almost 6pm until I actually started dinner.

Good thing it was easy tonight.


For me, I made an entire spaghetti squash.  It was small and only actually produced about a cup of actual squash. This one came right from the garden. I also roasted some broccoli and zucchini and paired it all with TJ's Rustica sauce, some peas and goat cheese. 

Toly had chicken aldfredo. 


 We both sat down and realized this was the first dinner we had eaten together in almost two weeks.  Toly has been working a ton of overtime and I have been so busy with work and other things that we've not really seen each other much.  It was nice to finally have an evening dinner together, so we toasted with some wine.

And now I'm finally able to relax.  I feel like I haven't had a chance to do that in a few days.

  1. Yayyy! Glad you're back. I bet you passed! But I will keep my fingers and toes crossed. And now your half is coming up! Such a busy lady. Josh and I rarely eat together any more. Hes working late or I'm teaching-ridiculousness. Makes you appreciate the nights you actually do eat together. Beautiful bfast bowl (as per usual)

  2. I'll have to remember not to read your blogs at night... I'm trying so hard to eat really well and never late and well... now I'm hungry! I, also, am sure that you have passed! Can't wait to hear!

  3. I'm glad that you were able to enjoy a dinner with your sweetheart...isn't it crazy how life can get so busy sometimes? I know you worked hard this weekend, and I hope that it pays off (I'm sure you did well on your test!) And I agree with you about those frozen meals...they never fill me up! Thanks for sharing sweet woman.

  5. glad all the stress of that can be put behind you! nothing like whole foods to ease the pain ;)

    i know what you mean about frozen meals, too! i always "beef mine up" with steamed veggies!

    OH YEAH and i was wondering...would you wanna meet up with my friend and i at the 5k on city island next weekend for breast cancer and walk with us?! we could grab some lunch afterward or something!
