Home is Where the Heart is



Another successful day of packing!  It's almost done…..almost. 

When I woke up today, I realized that this was going to be the last Sunday Breakfast Toly and I would be having for awhile.  I got a little sad, and then got busy. 

I've been wanting to make one of my favorite fall breakfasts for awhile now, but with our crazy weekends, we haven't had a chance to spend a Sunday morning together in some time. 

Today, I got started a bit earlier because I knew this one would take a little longer than usual, but it's so worth it. 

Fall Baked Apples 
Makes 2 Servings

  • 1 large Honey Crisp Apple (or apple of choice)
  • 1/4 Cup Dry Oats
  • 1 TBL Chopped Dried Apricots
  • 1 TBL Dried Cherries
  • 2 TBL Applesauce
  • 1 TBL Chopped Walnuts
  • 1 tsp Coconut
  • 1 tsp Coconut Oil (or canola oil) 
  • Cinnamon
1. Preheat Oven to 425*

2. Mix all ingredients (minus the apple) into a bowl and set aside. 



 3. Cut the apple in half and scoop out a deep cavity in the center. 



4. Fill your apples with the filling and place a tiny dab of butter on each one. 


5. Cover and bake for 30-35 min. 


I topped mine with honey greek yogurt and honey almond butter.  It was heaven! 



To complete our meal, I shared a Panera Pink Ribbon Bagel with Toly which I got yesterday at the Breast Cancer Walk.  These are by far, my favorite bagel.  Unfortunately, the bagel was a bit stale (obviously, they were handing them out for free) so I actually ended up giving half of it to Toly. He didn't mind the extra chew.

After our breakfast, we ran some errands together and then went to go check out our lot.  


Still a big open field, but it was all ready to be dug.  We are told that the digging begins this week, FINALLY! 

Toly would live here now if he could.  I've never seen a boy so happy to be standing in a pile of dirt. 


When we got home, I made us some lunch (which was just leftover pizza from last night so nothing to really show) and then set out for a run.  It was so beautiful today and truly the epitome of perfect running weather.  

I set out for a wonderful 4 miles.  I've decided that 4 miles seems to be my limit these days.  As soon as I hit 3, I start to feel it in my knee and by 4, I have to stop.  I've decided that during this time, rather than get depressed about my decrease in mileage, I should look at it as an opportunity to master my shorter distance and speed.  I love running 5k's and I'm getting really good at them.  So, I'm going to appreciate the fact that I can still run, even if it is only 4 miles, and work my way back up to running longer distance races by the spring.  I run in the Cherry Blossom 10 mile Race every April to represent my company and this is going to be my next substantial race to work towards.  Hopefully, I'll be back at the half marathon stage by next year. 

Now dinner tonight was another fall favorite recipe and comes from the adaptation of the lovely Ms. Kath.

Vanilla Butternut Squash and Apple Soup


This soup is really fantastic and if you have not checked out Kath's recipe, please do.  She has a few different variations but you really can't go wrong with any of them.  I added a generous amount of Kale and also used the rest of my Apple Cider bread to make Cinnamon and Rosemary croutons to top.  

Since Toly doesn't care for squash or soup, he got a Twice Baked Potato for his entree. 



I served our soup (potatoes) with a fantastic side salad and called this a lovely meal. 

I think this week is going to be rough.  Not from a scheduling aspect, but from an emotional aspect.  Even though we are so excited about our new adventure and home that is being built, it's also entirely sad to leave our first home.  We love this house and it's really the start of our lives together.  Bigger and better things lie ahead but we will always remember the first place we called "home."

  2. I know it will be a hard week (leaving my last place was heartbreaking) but you will find so much joy in your new home, and you will always have your memories! Those fall baked apples look delicious...and well-worth the extra effort. Thank you for your kind words...I appreciate them greatly during this hard time.

  3. It is definitely tough to move when you've experienced SO much there. But- so many good things to come. I know your new place is just going to rock. I can't tell you what looks better- the baked apples or the soup! YUM! Hope you have a great week. I will be a little MIA the first couple days

  5. Totally been there before and staying with your parents is going to have it's own challenges. But you all will get through it no problem. :)
