Father Daughter Lunch Date



This week is flying by.  I think we have something going on every single night and my days are packed, so that leaves little down time to think about much.  

Some of you asked what I've been doing these past few weeks while the treadmill is broken at our gym.  For those of you that don't know, we have a treadmill in our complex gym that I use every single morning to run.  I choose not to run outside because it's so early in the morning and still dark.  Well, the machine has been broken for over a week, so all last week and all of this week, I've been converting to my second favorite machine….the Elliptical Trainer. Before my running days, I did ALL of my cardio on the ET.  I really enjoy it but I have to admit, I miss my morning runs.  Hopefully the machine will be working again soon! 

Breakfast up next. 

1/4 Cup Total Raisin Bran, Blueberry Chobani, Blueberries, 1/2 Banana, 1/3 Crumbled Zucchini Muffin slathered with Mighty Maple

I had quite a few things to get done in the office this morning to prepare for a CRAZY end of the week.  Before I knew it, my stomach reminded me I had a much desired lunch date with my sister. 

I opted to bring her lunch from her favorite deli.  She is looking so great after having a baby a week ago, don't you agree?



For lunch, I had a large salad with tuna.  I never use to order tuna salad from deli's because I really do hate mayo but some places don't use a ton in their recipes so I can't really tell.  This deli is one that I actually don't mind.  And I do love tuna on my salads.  Gotta get that protein! 


As we sat down to eat, a surprise guest popped in to join us! 

Pop Pop!  (His new chosen name) 

We all had a great Father Daughter Lunch Date and figured it was just right since we missed our last Father Daughter Breakfast last weekend. 

After we ate and the little guy woke up, someone got their Pop Pop fix for the day. 



It's so hard to leave him, but I eventually had to say my "goodbyes" and "I love you's" and head back to work.  

We had our home inspection tonight, which meant I was being kicked out of the house once again.  Ugh, just when I thought it was over. ;) 

I decided to go right to the gym to kill a few hours.  I ran 3 miles on the treadmill (where I got my fix) and then took a wonderful hour long Body Pump Class. I haven't taken Body Pump in a few weeks so now my arms, legs, and shoulders are feeling like jello.  Great class though! 

When I got home finally, I was obviously starving.  I heated up something as fast as I could.  Thank goodness for leftover Butternut Squash and Apple Chili. 



My, that Pumpkin Cornbread is just so good.  I had two pieces tonight feeling as though I deserved it after Body Pump. Heck who am I kidding, I deserved it either way. :) 

I also found my favorite Russian Salad sitting in the fridge, vinegrette. 



My MIL makes this for as long as I can remember and I love it.  It's a chopped vegetable salad of beets, peas, corn, pickles and potatoes. 



This dinner looks very fall-like and tasted amazing.  The best part about it was that I didn't spend more than 5 min putting it together. 

I have a very early day tomorrow so I'm hoping to get to bed on time tonight.

  4. How sweet! I love having lunch with my family members..and you all have so much to celebrate with your sweet new nephew. I hope you got a great night of sleep and feel fresh and ready-to-go tomorrow!

  6. What a great family lunch- a treat during the week!! Your sister seriously looks fabulous. And Pop Pop looks so proud/happy. Yayy for BP! I can't wait to launch the new release- the music is AWESOME. You will love it. That dinner does scream fall. I want the cornbread.

  7. My freshman year of college we had an in-dorm gym with FOUR broken machines. They weren't fixed all year...craziness!! Hopefully your machine gets fixed soon!!

    I call my grandpa Pop Pop too. So cute :)

  11. I miss my weekly lunch date with my Dad :( Enjoy the time you have with yours!! When I had a gym membership, the ET was my cardio machine of choice, loved it!
