Feel the Burn


Another day down, one more day closer to Vegas!  I'm starting to get really really excited now!! 

But first, I must get through the next few days, which shouldn't be a problem because they are quite fulfilling. 

Well, let's review today…..

It began like any other morning, 4am wake up, 6 mile run, shower, dress, breakfast. 

I switched things up just a bit from my normal cereal yogurt bowl and went for simplicity with just granola fruit and yogurt. 

I made a batch of granola this weekend and I have to say, it may be my best batch yet.  

Apricot Cherry Coconut Granola

1/4 Cup Granola, 1 small nectarine, cherries, peach Chobani, chia and flax


1 slice of Ezikel Cinnamon Raisin Bread with 1 tsp Cinnamon Raisin PB, 1/2 Sliced banana, Cinnamon and Honey



It was a nice change.  I'll admit, not a huge change from the usual, but not incorporating the "essentials" (that being nut butter, yogurt, and granola) into breakfast would just be tragic. 

Work was fantastic.  I conducted a training for my new committee and had a blast.  Everyone on the committee is great and I feel so good about the upcoming year. 

Training took up most of the morning and by the time it was over, it was time for lunch. 

Leftovers it was! 


Leftover Enchilada Veggies (from last night), Pinto Beans, Tomato, Pineapple, Salsa, Guac, Yogurt on a bed of lettuce with a few Blue Corn Chips

The deconstructed enchiladas were perfect on a salad the next day. 


After work, I came home and went right to the gym for some upper body.  Tonight, I increased my weights again and immediately started to feel the burn as soon as I was done. 

2 mile warm up on Treadmill
3 x 12 Overhead Press (40 lbs)
3 x 12 Lat Pull Down (50 lbs > 10 pounds!)
3 x 12 Bench Press (40lbs)
3 x 12 Row (50 lbs > 10 lbs!)

That was all for tonight because I needed to get home before the rain started to walk Sammy.  

We are trying to eat down the fridge this week in anticipation for our leave, so leftover soup came quite handy for a rainy evening like tonight. 

There was just enough to make 2 bowls with a few additions. 

Toly had Roasted Potatoes, I had Roasted Broccoli 

Crab Corn Chowder

This soup gave us 6 good bowls and called for minimal ingredients. I have to say, soup really is one of the most economically conventional meals.  Not only delicious but definitely a huge bang for your buck and little effort. 

Now I have some work to get done.  Busy day tomorrow!!

What is your favorite soup recipe? This Crab Corn Chowder definitely tops my list, but some other favorites of mine are Vegan Coca Coconut Chili, Moroccan Stew, Pumpkin Bean, and the classic Tomato.

  1. Hi Lauren! I am a newish reader. Your granola sounds really delicious! And I agree with you on soup... so easy and inexpensive for the amount you end up with.

    I noticed that you often measure out most of your food. Like in your last post, you had a teaspoon of flax with your breakfast. I am just curious and wondering if there is a reason you use such a small amount. A teaspoon of flax is only 10 calories! I don't want to offend you by asking, but I was just wondering if it was related to your digestive issues. Thanks!

  2. Ah! You must be so excited. I wish I lived near you - we could workout in the mornings together! And then you could make me breakfast haha. That soup sounds fantastic- I need to make it for Josh. I love homemade black bean and vegan cream of asparagus

    Thanks for reading and for your feedback. Breakfast is probably the only meal that I do measure out just because I have a hard time controlling my portions with cereal and nut butters. I am sure if I used a scale, my portions would be way more than I actually think. But as far as the small amounts for some of the items, yes, this is entirely due to my digestive issues. Too much flax, chia, or fiber does not sit very well and also, I am getting TONS of fiber in so many other ways throughout the day. If you notice, I eat an unusual amount of fruit and veggies, so I do try to balance it out as best I can.

  4. I need to try some new soup recipes....I usually only like soup in the winter and fall! It has to be hearty if my husband is going to eat it!

  6. Those look like tasty leftovers!!! My favorite soup recipe... hmm... I loooove vegetable soup! I usually just take some tomato soup, add zucchini, carrots, peas, corn, and maybe a little pasta. YUM!! I love soup :)

  7. I love my mom's simple vegetable soup (served with a crusty loaf of bread, of course!). I'm getting excited about your trip too...I know you will have so much fun, and you deserve it! Don't you just love Ezekiel bread...I'm addicted!

  13. I've never made my own soup but I love one of Annie's soups with lentils. I can't remember exactly what it was called. I'm also a big clam chowder fan--as long as it isn't too fishy.

  14. AH VEGAS! You're going to have SO much fun, I'm so excited for you!

    Your breakfast looks PERFECT. I've made my own granola, like, ONCE... don't know why I don't do it more! And Ezekiel bread (and the English muffins!) is so good.

    My dad makes awesome soups that I can never top. One of my favorites is his mushroom wild rice soup!
