Perfectly Ripe


There are many things that I am thankful for.  Actually, there are millions of things that I am thankful for, but there is one particular time in my life that I am beyond grateful for the delicate bounty of nature's freshest produce.  This would be that time! 

It amazes me how different foods can taste when they are actually fresh and in season.  I really don't think foods are meant to be eaten out of there natural element.  For example, a watermelon in December tastes absolutely nothing like a watermelon in July.  Why is that you ask?  Well, the melon purchased in the winter is obviously not coming from anywhere close to you.  It's being grown half way across the world, pumped with chemicals and preservatives to keep it fresh while it travels for days/weeks until it reaches your cart.  I just read that fruit stops ripening immediately after it is picked.  So you're best bet to obtain the ultimate essence of a real fruit or vegetable is to eat it immediately after it has been plucked from its natural environment. 

That is why you may be seeing copious amounts of fruits and veggies in my meals right now.  Obviously, my diet is primarily made up of these things, so when they are 100% in their prime, you better believe I am not missing the chance to get as much of them as I can. 

Exhibit A: Breakfast

1/4 Cup Kashi Go Lean, 1/4 Cup Organic Cinnamon Squares, 1 nectarine, raspberries, 1/2 a banana, Apricot Mango Greek Yogurt, White Chocolate Cherry Almond Butter, Chia

Grapefruit and Grapes

My 8:30am meeting got pushed to 11am and went late.  With rumbling tummies, everyone left the meeting and dashed for lunch. 

I followed the crowded in b-lining for lunch, but opting out of pizza and wings, I went home for more veggies instead. 

I had 2 pieces of sushi leftover from last night and usually I don't care to take sushi home, as it never seems to be nearly as good the next day.  But I knew it would be the perfect addition to my salad today and I thought, what the heck, I'll give it a chance. It did still look fantastic…


My salad consisted of leftover Cold Sesame Noodle Salad (from Tuesday night's dinner) over spinach,  Steamed Broccoli, and juicy pineapple.


The sushi was okay, but definitely not as good.  Sammy actually ended up getting most of it because it fell apart and on to the floor.  Man, I'm not doing so hot with my sushi eating skills. 

Back at work, I had the most embarrassing thing happen to me that I just have to share.  A few of my co-workers and I were talking about yoga and my one co-worker asked for me to show her "the crow" move.  I'm not very good with this one, but I've done it before and she insisted, so I eventually gave in and began to enter the pose in my cropped dress pants and heels.  (First mistake) Then, as I got into the pose, I held it for about 5 seconds when I lost my balance, tipped over and went face first into the hard floor.  Yes, there were rug burns, bruises, and hurt egos.  Let this be a lesson to you…. Do not attempt a difficult yoga pose when you have not mastered it, in front of a group of spectators, on a hard cement surface, and especially in high heels! 

I digress. 

Back on the home front, it was most certainly a makeup for last night's missed BFD. I know I must say this all the time, but this was my best egg sammie yet!  

Just wait until you see this baby….

Egg Sammie BLT 
The components:
  • 1 slice of TJ's Whole Wheat Tuscan Bread
  • 1/2 Mashed avocado
  • Dijon Cream 
  • lettuce
  • tomato
  • smoked salmon (my "b")
  • and one perfectly fried farm fresh egg

I also made roasted zucchini with salt pepper and parmesan and split a corn ear with Toly. 


We also finished off the watermelon that was on it's last leg.  Watermelon can simply not go to waste. 


Heaven on my plate!  Extremely messy but that is what made it so good.  The egg was perfectly runny and oozed out all over the sammie with the first bite.  The spicy dijon mixed with the butter avocado bound the bread beautifully and the salty salmon was ideal to balance out all of the flavors.  Apparently, I can't speak highly enough of this one. 

You can see why BFD is such a highlight for us.  It has become so routined that a week without it would just be unheard of!

  2. Sometimes yoga mishaps happen. I once drank too much and announced, "Hey, I can stand on my head!" Well...I'm sure you can guess how that ended. Your blog is too cute and all your eats look delicious, I'm loving the look of that grapefruit :)

  3. owwwwwwww is it a puppy? I hope so. I agree- its amazing how much better certain fresh fruits and veggies taste. ESPECIALLY tomatoes- what a difference! You know I've been enjoying all the melon I can get my hands on. Hooray for still being able to enjoy the BFD. And I hope you're ok after the fall! I do stuff like that all the time ;)

  8. Oh my gosh I would've loved to be there to see the yoga pose! Girl, I give you kudos for trying in your work clothes and heels. I think that's awesome actually :)

    Anywho, your recipes sound soooo good. And I bet Sammy is happy that you're sushi eating skills aren't ninja like lol. I'm going to suggest my mom make an egg sandwich with salmon, and all of the things you listed because she loves all of those things. And I feel the same way about fresh produce. It's also interesting to see how a lot of the produce available in the summer has more water.. to cool us off from the heat lol! And the denser root vegetables are available when our bodies need a bit more to keep us full and warm.

  12. catching up.. the beach looked so fun and YOWZA that was a huge zucchini! i never like to take sushi home, either, but usually that isn't a problem because i always eat all of it! haha. and that sandwich combo sounds perfect! dijon+eggs always make me think of you now when i eat it :)

  13. i LOVE that you love fruit, because i LOVE fruit. its just so juicy, sweet and delicious! and that egg BLT is totally amazing - anything with avocado pretty much gets that ranking in my book though :)

    can't wait for the exciting news...i think i have an idea of what it is... :)
