With a Cherry on Top


Wow, I am loving all of your Sandwich Creation responses.  Some of my favorite so far….

Monet - My favorite sandwich combo would have to be: caramelized onions, provolone cheese, roasted red pepper hummus on whole grain bread.
Lauren Elizabeth (Which is actually my name so that's kinda cool)- My current obsession: mashed avocado, ripe & juicy tomato, thinly sliced red onion, goat cheese, and...wait for it... a fried egg all smushed between chewy ciabatta bread. YUM. 
Kaite- My all-time favorite is a banana and nutella sandwich sprinkled with cinnamon and a pinch of salt on raisin walnut bread pressed on a panini grill of course! 

Mmmm, you guys make my mouth water every time I read your comments.  Keep them coming!  And if you haven't entered my GiveAway for the Calphalon Panini Press yet, please do.  You have until Friday!! 

Okay, now as for today, it was pretty typical.  It always seems that Tuesday turn out to be quite typical.  Actually, I think I've even titled several posts "Typical Tuesday" based on this theory. 

5.5 mile run at an easy pace.  I read an article today that running on an incline on the treadmill dramatically effects your speed.  For example, if you run at 6.0 mph at a 0% incline, you will be averaging a 10:30 min mile on the machine, rather than a 10:00min mile on the road.  The extra wind resistance and incline makes running outdoors a lot harder.  I know this and I wish I had more opportunities to run outside, but it's just not reasonable or safe for me to be running 5 miles at 4:00am in the morning.  I'm happy with my long weekend runs on the road for now. 

For breakfast, I mixed up a new cereal/yogurt creation. 



1/4 Cup Raisin Bran, 1/4 Cup Kashi H2H, Peach, Blueberries, Grapes, Blueberry Oikos, White Chocolate Cherry Almond Butter (dangerously amazing)

With a cherry on top! 

I think every good meal deserves a cherry on top.  Maybe this will be my new signature on a great dish.  

I ran around all morning long and quickly stopped back in the office to check mail and eat some lunch.

Lunch was easy.  

Leftover Grilled Salmon over Arugula with Peach/Nectarine Salsa

I didn't put a cherry on top but I did eat a nice handful on the side. Apple was saved for an afternoon snack. 



This was even better the next day!  Salmon ranks up there in my top 3 favorite foods.  I especially love the way it makes me feel after I eat it.  My body thanks me profusely for feeding it such a nutritious portion of healthy fat and Omega 3's.  I actually think I glow a little after I eat it! ;) 


When work concluded, I came home and hit up the gym for round 2! 

Tested the incline theory and not that I doubted, it was much more difficult to run on an incline. 

15 min run on 1% incline on treadmill
Overhead Press
Bench Press
Lat Pull Down
Low Row
Weighted Crunches
5 min bike 

I worked up quite a sweat with this.  Maybe the 1000% humidity played a part in that, but needless to say, I did not come home smelling like I did when I left. :) 

Dinner tonight was exciting because of a fantastic new product I was sent to review! 

Now I am not really a big fan of kitchen gadgets.  I like the idea behind them all, but when it comes down to it, I usually rely on a good knife 90% of the time.  Pulling out complicated tools just makes my cooking time more involved and I'm all about easy when it comes to cooking. 

But when I saw this product, I knew I needed it in my life. 


I have major issues with pressing tofu.  No matter how hard I try, I never seem to get it dry enough.  I actually hate the pressing process and do not have any patience for it.  

The Tofu Xpress solved all of my problems!! 

First you take your tofu and pour out the water. 


Then you place the tofu into the base of the contraption and press the lid down until it clicks into place. 



Let this sit until you are ready to use the tofu and that's it!  Perfectly pressed tofu without using an entire roll of paper towels and waiting for ages! 

I loved the Tofu Xpress and see myself using this quite often.  A vegetarian's best friend!

I used my dry tofu to make a favorite stir fry of mine. 

Apricot Tofu with Broccoli and Butternut Squash 


Served over coconut brown rice (brown rice cooked in a little coconut milk) and a bed of baby spinach. 

Delightful, but I forgot the cherry!  Oh well, I will save the cherry for dessert. :)

  1. That would be the cutest signature move! You totally need to put cherries on top of your favorite meals (even if you have to photo shop them in ;)). Beautiful breakfast (not that I'm surprised). I totally want one of those tofu presses. I've never made tofu at home- mostly because I don't want to have to press it!

  6. All of those sandwich creations sound so tasty, I'm going to have get more creative in my sandwich ideas!!! Your lunch salad and breakfast looks so good I can almost taste them!!! Way cool tofu gadget :)

  7. Interesting stuff about the treadmill, I always FEEL faster outside but am usually slower! Funny how that works. YAY for Elizabeth as a middle name- it's definitely a popular one!

    lovin' your salmon glow! ha! totally! i love salmon, too. i don't eat enough of it. thanks for the reminder. i love using the incline on the treadmill. makes it more like running outside!
