Don't Cry Over Rancid Milk


You are all so amazing!  Really!  All day, I have been getting the most inspiring comments/emails from your reaction to my post from yesterday.  To be honest, I was a little nervous to post about it, but I am so glad I did.  I really hope that my experience is able to inspire and encourage because if not, then everything I have been through would just be for nothing.  

Ugh, it was a looonnnnggg day!  I had to be at a school early this morning and it required an hour commute so I was out the door before the sun was up.  

I didn't have much time for a run, so I did a speedy 4 miles using hill intervals.  It kicked my butt!!  This may have been the first time in months that I've done hills and I forgot how challenging they can be.  When I was done in 33 min, it felt like I had just ran a 1/2 marathon.  If you don't have much time but want a killer workout, I suggest HIIT's.

Last night I made Overnight Oats

  • 1/3 Cup Muesli 
  • 1/3 Cup Oikos
  • 1 tsp Chia and Flax
  • 1/2 Mashed Banana
  • Frozen Mango
This morning, I pulled my oats out of the fridge and grabbed the container of coconut milk.  Now, this milk has been in my fridge for awhile but I know that non-dairy milks have a longer shelf life than cows milk.  I poured on a splash of the coconut milk to break up the oats.  Well, funny thing, when I went to lick the spoon, as always, I noticed the taste of my oats was a little off.  I glanced at the date on the milk and saw May 17th.  Okay, 2 days past the shelf life, no big deal. So I proceeded to pour my oats into my PB jar and went on my merry way. 


As I began to eat the oats, the taste was still noticeable but a little drowned out by the peanut butter.  I kept thinking it must be something different I did to the oats, perhaps the mango?  Well, turns out, the milk that I had thought was outdated for May 17th really said May 7th!!!  My first though….OMG I just ate rancid milk, I am going to be sick.  But then I kept talking myself out of it and prayed that my stomach would be strong enough to handle it.  

Turns out, my stomach is much stronger than I thought.  The milk had no adverse effects and I was very happy to be hungry again for lunch. Whew, close one!

When I made it back to the office, I couldn't believe how long the day had felt and it wasn't even 2pm!!! Thankfully, I made it through and came home for a gym date. 

1 mile warm up on treadmill
Overhead Press, 12 reps x3, 40lbs
25 crunches on ball
Bench Press, 12 reps x 3, 40 lbs
25 crunches on ball
Leg Extensions, 10 reps x 3, 60 lbs
10 min cool down on bike 

I took Sammy for a walk around the neighborhood and was happy to see the sun come out for the first time this week! 

And then, I channeled The Fitnessista for some Indian Wednesday! 

I have had this in my freezer for months and have been waiting for a reason to make it. 

I've only ever had Indian food one other time in my life and I really enjoyed it.  I usually don't prefer frozen meals but I heard good things about this one and I do think Amy's has the best packaged meals out of them all. 

But since I really can not justify eating dinner solely from a box, I merely used the box as an enhancement to my own creation. 

I stir fried eggplant, zucchini, with tomato, sauce, curry, cinnamon, garlic and ginger. Then I added tofu that I had baked in the same spices.  I heated up the Amy's meal but left out the rice (not a fan) and tofu (since I had my own that looked a whole lot better). 


I plated my creation on a bed of spinach with a few pieces of pineapple and green olives and served this with a piece of Naan with mango chutney. 
Turned out wonderful!  I really liked the Amy's meal, but I don't think I could just eat it by itself.  Truth be told, I really liked my addition much better but Amy really pulled all the flavors together. 

Still enjoying that Zin!  

And I will more than likely end the night with more fruit! Is anyone else eating their own weight in fruit right now?  I always feel like I eat sooo much of it during these months.  It's really just so good that I can never get enough.  Strawberries, Pineapple, Berries, Mango, Watermelon…I want it all! :)

  1. Hey hey! oh my goodness! So glad the milk didn't make you sick- phewwwwwwww! Both your lunch and dinner look incredible. You always have such pretty meals. You know I"m eating my weight in fruit right now. I just ate a ton of strawberries (deliciousness). I'm also hooked on carrots right now...so I guess I'm eating my weight in fruits AND vegetables ;)

  5. I just started reading your blog and I love all the veggies and fruits you use. One question, where do you shop to get all your produce? I love fresh veggies/fruits but they really add up, how do you make it work?

  6. I've been eating sooo much produce recently too! I really crave it in the warmer weather. I had some rancid coconut milk when I first came home too...I'd hoped it would last since Easter, but it definitely didn't!

  7. Glad you didn't get sick! I've had a few instances like that, too - it's never fun wondering if you're going to get sick all of a sudden! :)

  9. I'm glad that milk didn't make you sick! I'm always super paranoid about eating/drinking anything past it's date. I always double check. ;)
