Opa!



Why hello everyone!  

Weekends going well?

Ours was pretty fantastic.  With a busy day yesterday, it was nice to have a Sunday with no apparent plans in mind. 

Wait, scratch that.  Sunday morning breakfasts are always planned. This morning I whipped up a batch of 
Blueberry Banana Pecan Pancakes



Whole grain with flax, mashed banana, chopped pecans and frozen blueberries went into the mix.  Then topped with fresh blueberries and blueberry jam.  

For a bit more protein, I scrambled 3 eggs and probably ate about 1.  I gave Toly the rest. 



After this, I went shopping (grocery shopping) and Toly cleaned.  It was so nice to have him take care of the house while I was at the store.  I came home, put everything away and we were out the door again. 

This weekend was the annual Greek Festival at a nearby town.  We decided to check out the festivities for lunch. 

There was a ton of traditional Greek food and you could smell it from a mile away.  The line for the food was also a mile long but we waited patiently for our gyros! 



I love me a real veggie gyro!  


In addition to the food, we enjoyed greek dancing and singing.  Opa! 



When we returned, I took sammy for a long walk in an attempt to savor this beautiful day before the week of rain that is ahead. 

Dinner tonight was pretty outstanding.  

Coconut Shrimp


Apricot Dijon Stuffed Sweet Potato



For the shrimp, I dredged them in a mixture of cornstarch with salt, pepper, and chili powder. Then dipped them in egg whites and lastly, the coconut.  They baked at 350 for about 15 min. 

For the potato, I baked a sweet potato and then scooped out the flesh.  Mixed this with dijon, coconut milk, apricot preserves and salt/pepper. 

I served the shrimp over top a mango/pineapple/avocado salad and combined a bit more of the apricot and dijon as a dressing.



Sweet and satisfying! 

I'm actually feeling pretty accomplished right now.  I believe I have everything ready to go into the week and the night is still young.

  2. I love how varied your meals always are- you find ways to incorporate so many flavors and ingredients! That coconut shrimp salad looks to die for. Greek food is one of my favorite cuisines, so I'd have been all over that gyro as well! Glad you had a good day, hope Monday is just as great!
