I Eat Too Much, I Drink Too Much

There is a lot to cover so let's just forget all of the small talk and dive right into the past 48 hours……

Did you miss me?

Wednesday's Breakfast-

1/4 Cup each of: TJ's Twigs and Flakes, Kashi Go Lean, Kashi Go Lean Crunch, Pom Chobani, Kiwi, Berries, Coconut White Chocolate PB drizzle

Wednesday's Lunch:

Salad with leftover BBQ, Sesame Thai Noodles, Asparagus, Avocado, Strawberries, hummus, and Peanuts

Smoothie: Frozen Cherries, Blueberries, Spinach, Almond Milk

Last night, Jen, Brian and the kids came over for a cookout.  It was gorgeous out so we BBQ'ed and dined outside. It was glorious!

Assorted Kabobs on the grill

Grilled Veggies

Black Bean Corn Tomato and Feta Salad

Sangria

Everything was delightful.  Food in the summer just taste better when cooked and eaten outside.  Agree?

This little one stole my heart when he complimented and gobbled up my homemade guacamole! Such exquisite taste for an adorable 3 year old.

Jen and I

I can't believe how big Emily is getting.  This little girl is on the move now and loves to be the life of the party.

Of course the night commenced with one of Jen's infamous desserts.  She said she was going to keep it simple but apparently this is her version of "simple."

Oreo Pie

Wow this definitely did not taste simple.  My idea of a simple dessert would have been opening a bag of chips a hoy and grabbing a tub of vanilla ice cream.  Here is a tip…..if you LOVE dessert but can not bake to save your life, find a best friend who is an outstanding baker!

We had a wonderful night but I think I may have had a little "too" good of a night.

This morning, I overslept my alarm clock.  I've only done this 3 or 4 other times in my life that I can remember, so I'm guessing I either went into a food coma from all of the good grub, or I drank a little too much sangria.  Probably a mixture of both.

Either way, I jumped out of bed and felt rushed the entire morning as a result.

Breakfast was rushed but delicious!

1/4 Cup Natures Path Flakes, 1/4 Cup Oatmeal Squares, Kashi Harvest Wheat Nuggets, Granola Sprinkles, Strawberry Oikos, Strawberries, Banana, Dark Chocolate AB Drizzle

I had a morning of meetings but was able to run home for lunch.

Leftovers never tasted so good!

I put everything over spinach and called it fantastic! But then, what doesn't taste fantastic when it's smothered in guac and salsa?

Speaking of salsa, I was sent some new salsa to review…..

Traverse Bay Farms specializes in their all natural gourmet salsa line.  Check out some of these flavors, black bean, pineapple, RED RASPBERRY!

I tried the pineapple first.

And I loved it!  It was definitely more spicy than most pineapple salsa that I am use to and I love that.  I am a spicy salsa girl.

So that was lunch.

When I got off work, I decided to run since it was missed this morning.  I did 3 miles, some leg work and then called it a day.

Dinner was taking priority because it happened to be a BFD night.

I am obsessed with the farm fresh eggs!

Just look at how amazing these eggs look…..

Some of you ask how I cook my eggs….

Personally, I am a big fan of the "country scramble."  I put a little pat of butter in the pan until it melts, crack the egg, let it sit for a minute, and then poke the yoke with a fork.  Then, I take a spatula and scramble this all lightly until it's just BARLEY cooked through.  I like them fluffy but runny.  Really, you only scramble them for a few seconds, take the pan off the heat and let them sit for a min.  They will continue to cook and reach the perfect consistency.

I topped the eggs on a slice of toasted Rustic Bread with Dijon, Avocado, Roasted Asparagus and then added goat cheese and a few dabs of Crofters Jam.

Eggs, Dijon, and Jam = heaven!

We had our egg toast with creamy tomato soup and shared an orange.  Loved everything about this dinner.

In other news…..

Look who rocked the white before Labor Day!

No shame!  Too things I hate- food rules and fashion rules.  I feel that both of these things are meant to be broken.

Anyone else like to "break the rules" on certain things?

Okay, that's enough from me.  Now I am off to read all about your days.

Take care guys.

I break all kinds of food and clothing rules all the time...although I've actually never bought a pair of white pants. Not b/c of the rules, but b/c I'm certain I'll get them filthy right away! Ha!
