The Ultimate



Today was killer when it came to eats.  It was all about achieving the ultimate, starting with breakfast and ending with some of the best nachos I could ever imagine. 

More on that in a moment.  First, I would like a take a second to answer a few questions that people have been asking. 

Regarding the Baked Oatmeal in my last post.  I really have no idea how this is made or what is in this heavenly creation.  I probably don't want to know for that matter, because honestly, I can assure you it's pure amazing.  It's a warm doughy bowl of cakey oats topped with a sugar crystalized crumbly crust.  It is one of those things you just need to try to believe. 

As for the Blackberry, I am so in love!  I was really contemplating getting The Droid before I was given this B-Berry, and I am sure that The Droid rocks (as does the IPhone) but when you are getting a free personal device, beggars can't be choosers.  I am digin' all of the cool features and apps with the Blackberry and if anyone has one of these and wants to BB message with me, shoot me your ID! :) 

Okay, now on to this ultimate day.

First began with the ultimate run. 

I woke up feeing great and set out hopeful for my anticipate mileage.  I just began my 10 mile race training plan which I am so excited for.  Here is what I came up with…..

On the schedule for this morning was 6 miles.  Well, I felt so good into the run.  I actually ended up completing 6.5 miles in just under 54 min and really wanted to keep going; however, time was against me.  

This girl's gotta work you know.  

Another ultimate was the sweater I chose to wear today.  It's extremely chilly these days and since wearing my snuggie to work probably wouldn't go over so well, I found the next best thing. 


The biggest fluffy sweater I could find.  I love this thing, it makes me want to curl up under my desk and nap all day, which I didn't do, but I would be lying if I said the thought didn't cross my mind a few times. 

Okay, continuing on with my ultimates, next was the ultimate bowl of overnight oats.



I knew this bowl would be great when I licked the spoon last night.  1/3 Cup Oat Bran, 1/3 Cup Pumpkin, 1/3 Cup Almond Milk, 1/2 banana, Chia, Flax, Maca, Cinnamon, Pumpkin Pie Spice.


Topped with Zoe's Granola, Pom Seeds, the other half of my banana sliced, and coconut


These oats were right on!  I really think the key to the best texture in overnight oats is using oatbran.  Not really sure why, but the consistency is perfect for the overnight method.  Super creamy, thick and luscious.  

Okay, I am not even going to make you wait any longer for what I am about to reveal to you next.

Get ready guys, this is truly the ultimate of all things delicious…..

THE ULTIMATE CHEESY CORN AND CRAB NACHOS!!!!!!


Now I know what your thinking.  Did she really just say that?  Cheese? Corn? Nachos? 

Yep, that's right, and if you can believe it, I even made my best attempt to make them as "healthy" and "Lauren-diet" friendly as possible. 

Okay, here is the process.

I placed a layer of Food Should Taste Good Multigrain Chips on the bottom of a shallow baking dish. 

I topped my side with spinach, shredded zucchini, Crab, corn, chili powder, diced chiles, feta and tomatoes. (Toly's side minus the green stuff and lots of shredded cheese)


Baked at 400* for 15 min and this is what occurs….


For the ultimate toppings (as if there weren't enough already) I made a quick  bean and mango salad….

And averted to my two favorite mexican condiments….

Sorry about the bad lighting.  We tend to eat by the dim candle light which doesn't exactly make the best opportunity for food photography. 

Sweet Baby Jesus these were ultimately unbelievable!!!!  

I just laugh at people who say that healthy food isn't enjoyable.  Here I am, a nutrition nut that is battling a colon disease, and I still find ways to eat like this.  It's DOABLE, you just have to be determined and creative. 

Well, as I nurse this nacho baby that sits in my tummy, I have decided that I won't be moving much more tonight.  Food coma has officially taken place, but it was so worth it.

So as you know, I am running in the 10 mile Cherry Blossom Race in DC on April 11th.  As if the race itself isn't exciting enough, the day before happens to be my Birthday!!!  I would like to plan a Blogger lunch on Saturday, April 10th somewhere in D.C.  If anyone is running in the race that weekend or will be in D.C, please shoot me an email.  I'll have more details later, but I just want to see if anyone is interested. 

Okay, now this ultimate day has come to an end and I am pretty much spent over all of the excitement.  

Hopefully, I will be able to cease it all with the ultimate nights sleep. :)

  2. Hahaha you are so cute with your nacho presentation. Nachos are definitely a non-healthy food that I LOVE. I could totally go for some of that right now--especially with the CRAB!!!!!!

    So my brother is flying back from London for his spring break....so I'll most likely be going home the FIRST weekend of April :( :( :( :( :(

  6. Nothing better than a big comfy sweater! Glad you are finding ways to stay warm. Those nachos....drool! I love tortillas of any type, and nachos are just heavenly! I might need to make some homemade nachos for me tonight! That is so cool that the race is right after your birthday! Wish I'd be up there to meet up!!!

  10. that sweater looks so comfy! I love love love making nachos, you can add so many healthy things to them ( and unhealthy) but yours look delicious!

    I don't think I comment on your blog very often- but I have stopped in several times before. Anyhow, love the nacho baby and good luck with your training! I might consider that race since my sis and parents now live in DC!
