Lucky Weekend

I'm not really sure how we got so lucky, but it is another one of those, laid back, sun shining, non demanding weekends, with a great balance of time to relax, time with each other, time with family , and a little time to be productive.



Last night, Toly and I had a wonderful dinner and a movie date night. We ventured to a great sports bar for a nice casual dinner and then saw "Law Abiding Citizen." Very good movie! I was actually surprised at how good it was. A bit intense, but it keeps you on the edge of your seat the entire time.


This morning, I did something that I NEVER do! I slept in!!! Unintentionally however. I set my alarm for 5:30am with the intent of doing 12 miles, but either I never turned it on or I turned it off in my sleep, I woke up naturally at close to 7am. Since I didn't have time to do 12 miles, and the temps were below FREEZING, I settled on a speedy 8 mile treadmill run in 1hr 8 min. I hear tomorrow is supposed to be gorgeous, so hopefully I can fit in a short run outside. I'm trying to take these last chance opportunities before the real chilly weather comes.



This morning was frosty. Walking a few hundred yards to the gym and back was brutal and all I wanted was something to warm my bones for breakfast.



Enter....Pumpkin Oats.




So lovely. I added a spoonful of cottage cheese to this batch, as recommended by Kath, to obtain that pumpkin cheesecake like consistency; however, I wasn't really diggin' it. Maybe whipped cottage cheese would have been better? But the curds didn't dissolve so well into the oats so it was rather lumpy. Oh well, my oats were still fantastic and just what I was craving.


The rest of the day was left for errands. Bj's, Target, the Hair salon.....spending more money than I care to on a Saturday, but you do what you must.
Pizza and Entourage was on the menu for this evening.
I must say, the pizza tonight was especially epic.




Pear, Caramelized Onion and Spinach, Pistachio and Blue Cheese on Whole Wheat Naan with a Dijon Creme sauce


Salad was also quite commendable..


Grapefruit, Avocado, Radish and Pom seeds in a Balsamic Poppyseed dressing





I topped my pieces with Cran Chutney (Oh my how I love this stuff. My jar is half gone after 2 weeks. In my defense, it's a small jar! :)
I made Toly a Chicken Bacon Alfredo version with his favorite side salad.

Dinner was delicious and now we are on to fill our Entourage obsession.

Tomorrow should be another fantastic day to continue with this weekend. Sunday breakfast, a quick grocery trip, a little baking (well, sort of) and then family dinner at my parents. I'll be back to show you later.

  1. ahhh sounds glorious - I'm a little jealous :) Entourage and pizza is a great combo (especially homemade pizza that incredible- love the pears on there). I'm done with day 2 of body pump training and cannot wait until tomorrow evening. Its been fun and def educational. I'm not AS sore as I thought I was going to be- which is great! Have a nice Sunday

    Other than that, your eats all look DELICIOUS! I have a huge can of pumpkin sitting in my pantry :D And the pizza! How does it taste with the Naan as the base??

  10. Good for you for sleeping in!! I can't believe it's below FREEZING there!!! For some strange reason, chicago is having a wonderful sunny weekend. I think you should be so proud of yourself for running so many miles...I wish I had your discipline. (and fitness of course!)
