I Came. I Conqured. I Baked!

Why hello there! Fantastic Sunday!!!

I mean really, it doesn't get much better.

Okay, let me back up. Every fantastic Sunday begins with a marvelous Sunday Breakfast right?

That's just what we had....

I made something a little different for a change.


Ever since I saw the Baked Apples on Lauren's blog a few weeks ago, they have been heavy on my mind. I've been working on this Sunday Breakfast for awhile....

I followed her recipe without many substitutions.


After they were done baking, I cut them in half and layered them in Honey Almond Yogurt! Soo good!
We ate our apple halves with a Maple Cinnamon Nature's Path waffle. This was the perfect compliment.

And a bit of colorful fruit.


Every single bite was gooey, creamy, sweet and utterly delicious!

After breakfast and some cleaning, we took advantaged of a stellar day and headed out for a glorious picnic/hike at Pinchot State Park.


(You'll have to excuse my awkward smile. I've been having some issues with swelling and pain in my mouth that is more than it has been)



We enjoyed a lovely little picnic by the water. Our lunch was equipped with turkey/pear/cranberry sammies, pita chips, veggies and grapes.

After lunch, we ventured on to a nice trail for our hike. This one was marked Moderately Difficult which is more on pace with what Toly and I like.


We got back later in the afternoon and I moved on to my next big task of the day.
Okay, sit back, this is going to blow you away.
I BAKED!
No joke guys, I really did.
And I'm not talking Kraft easy no-bake, there was the most terrifying ingredient of yeast involved.
I have been dreaming and drooling over the Vegan Pumpkin Cinnamon Rolls from Mama Pea for days. I couldn't stop thinking about them and after much thought and hesitation, I decided to just go for it!
(One of the reasons I hate to bake......)



They looked pretty decent but honestly, I haven't had them yet. They are in the oven now so you are all going to have to wait to hear the verdict.

I worked on dinner which was more up my alley.
It began with a little something like this....

And then a little of this....

My special glazed salmon
And ended with this amazing and most delectable salad ever!



I enjoyed every single bit of this. I admitted during dinner, that this was probably my favorite meal. Yep, this would definitely be my last meal. It's just that amazing.
Okay, I've got some Pumpkin Cinnamon Rolls waiting for me. Be sure to stop back tomorrow to hear the results. I'm a little nervous but then again, how can you go wrong with Pumpkin and Cinnamon?

  2. owwwwwwwwwwwwww those baked apples look jammin! I have to try that recipe- totally book marking right now! What a sweet day of hiking. I kid you not- I was thinking about hiking and a picnic lunch next weekend! Not surprising at all that I'd be wanting to do something you were doing ;) Nice work on the baking- the results look just heavenly! Have a good Monday chicky

    That sounds like SUCH a fun day!! Erik was working all weekend so I had to play it solo this weekend but I would love to go hiking and have a picnic sometime.

  10. Ahhh you have to let me know what the verdict is!!! Those vegan pumpkin cinnamon rolls look FANTASTIC, clearly you are a great baker. If it’s good, I will most DEFINITELY bake them!! Guess what??? I make your homefries and my boy friend loved them!! I didn’t bake them long enough, but I’m definitely making them again. Thank you for your recipe!
    I absolutely hate the cleaning up part of baking too…I somehow always make a mess with the flour! Ughhhh!!! Hope you enter my giveaway love!! Happy Monday!
