Change Will Do You Good

I'm having a splendid week so far, how about you?

There are quite a few significant things going on right now, which is kind of ironic because the timing isn't exactly conducive to my desire; however, when is it ever? I really believe that God works His wonders on his perfect agenda and even though it may not seem compatible to what I think is right, it somehow ALWAYS works out brilliantly. So, I am just going to sit back and trust that everything will turn out just how it is supposed to. It always has and it always will; it's just sometimes hard to remember this when you are faced in the middle of it.

Change is difficult no matter how good or bad it is. When something in our life is altered, we are forced to be vulnerable and unsure, which is always a sc I just came across an article that revealed several tips for embracing change…

Here are a few that I found helpful…

3. Be Skeptical of Common Wisdom
4. Learn to Live with Uncertainty (This is one I really need to work on!)

Anyways, digressing now….

One thing that hasn't changed much in my life is my most adored breakfast this fall…

Diced Pear with Cinnamon Warmed, Kashi Autumn Wheat, Flax, Vanilla Greek Yogurt, Chunky Natural Applesauce, Honey Almond Butter and Pumpkin Spice Granola

I don't believe a food could personify the season quite as this one does.

And, has anyone else been blown away by the citrus these days? Just look at the vibrancy in my grapefruit! I've truly discovered that eating in season is the way to go!

Dinner was another tribute to autumn by utilizing one of the most economically sound vegetable of the month….Sweet Potatoes.

This happens to be one of my favorite veggies, even though that list doesn't really constitute as a real ranking system because there are about 100 veggies that I would say are my favorite if you asked.

But, today, Sweet Potatoes are my favorite and tonight, I made a remarkable meal using the spud as the foundation.

I originally saw this on Lauren's page a few weeks ago and booked marked it immediately. I followed her recipe but made just a few changes.

Twice Baked Coconut Sweet Potato with Cranberries, Pistachos and Goat Cheese

I baked the potato for about 40 min and let it cool before cutting off the top, scoping out most of the insides and placing them in a bowl. Then, I added a splash of coconut milk, Maple Syrup, Dijon, Paprika, Salt and Pepper. I placed the mash back into the potato and topped with Pistachios, pecans, shredded coconut, and goat cheese. Back into the oven for about 10-15 min and that's it!


Toly's Potato was also incredible in his eyes.

Bacon Egg and Cheese Twice Baked Potato (Also from Lauren)

Same concept, different ingredient…I'm sure you can figure the rest out.

We had our potatoes with a lovely side salad. Romaine, beets, diced apple, radish and avacado in a Raspberry Dijon Balsamic.

Much like my potato, I was left pleasantly stuffed.

This is one of the easiest, most affordable and delectable meals. Many people don't think of making an entire course out of a vegetable, but I assure you, it's entirely achievable and always a success!

Tomorrow, we have off for the day from work, so Toly and I have planned a fun little road trip to Maryland. We are going to start the morning by going out for breakfast and then attempting to get a start on some early Christmas shopping. Should be a fantastic day!

  4. Sweet potato success indeed! Looks fantastic girl :) I love how you make the "his and hers" versions bc everytime I see them both I think how much I would like the "hers" and how much my boyfriend would like the "his" - you got this one down! Have a lovely daytrip tomorrow.

  6. i love sweet potatoes ... never serve them in my cafeteria :( only sweet potato fries which are not the same!! & that yogurt mess looks so good, esp with hte grapefruit on the side!

  13. Good for you for starting on the early X'mas shopping SO early! THe deals tend to come out later though, but it's definitely smart to keep your eyes peeled and the creative gift brain juices flowing.

    I see no creativity lacking though. Your sweet potato creations are absolutely YUM!!!!!
