Just One Of Those Days

You know your going to have “one of those days” when your morning starts off something like this….


  • You wake up to discover your favorite 4:30am tv show that is the only thing that gets you through those grueling morning workouts, has been replaced by one of the worst sitcoms ever created.
  • You tare a brand new contact lens.
  • You discover a rather repulsive looking bug crawling across your pillow and wonder how long it has found a home in your bed.
  • You arrive to work to find out that the parking lot is being repaved and you are forced to move your car to the opposite building located half a mile from your desk.
  • You find out that the bazillion copies you made yesterday had an unexpected update and needed to be redone immediately.
  • And last but not least, you spill a large cup of ice water all over your desk which ruins a few important papers that now have to be recreated.


Le Sigh! That’s about all I can do at this point.

Thankfully, I was able to avert the above hazards with some pretty outstanding eats. Eating good food always makes everything so much better…Amen?

Breakfast was a tropical yogurt bowl that really hit every spot.


  • 1/3 Cup of Kashi Cinnamon Harvest
  • ¼ Cup of Natures Path Granola
  • 1 TBL of flax and chia seeds
  • 1 kiwi
  • Diced Pineapple and blueberries
  • Pineapple Chobani

It’s official! The Pineapple is my favorite of all Chobani’s. I am so happy to see it on the shelves at my local grocery store now. I still have great plans to somehow incorporate this yogurt flavor into a carrot cake inspired creation.

After my crummy morning at work, I figured I needed to take a break and escape to the break room to unwind. I ate my lunch while reading, which is always an excellent stress reliever for me. It also helped that I had one stellar lunch! :)

This one is dangerously amazing! I used one Cinnamon Raisin English Muffin, Almond Butter, Spinach, and Sliced Pear. I also heated it up in the microwave for a few seconds so that everything melted together.

Oh my Oh my! I am in love with this Sammie! Allie, I’m sending you this recipe for the Secret Ingredient Contest. The Almond Butter was the highlight of course.

After work, and such a dreadful day, I was more than ready to work out some of my angst with a productive lifting session. Lucky for me, I had company tonight. Halleluiah that Toly’s OT is over! ;) Lifting felt great tonight; probably because I was full of energy from all of my aggression, but regardless, what a better way to put that to use.

Dinner was something that I have craving for quite some time.

Baked Feta Shrimp

I sautéed some shrimp in EVOO and garlic and then removed from the pan. In the same skillet, I added a can of diced tomatoes, fresh basil, capers, and oregano. Once the sauce cooked down for a few minutes, I replaced the shrimp and added sliced olives and feta cheese. Then, the skillet went under the broiler for about 5 min until the cheese melted.


I served the shrimp over a bed of steamed spinach and broccoli along Garlic Bread.


This recipe couldn’t be easier and it’s also incredibly delicious! Thankfully, breakfast, lunch and dinner saved the day for me. Tomorrow will be much better, I’m sure, but as for now, I’m ending this one early to put it out of its misery.

  1. Ugh! Those bullet points sound rough - especially the bug!! Any day that includes that awesome sandwich combination has to turn around a little bit?
