Fall Flavor Combos: Pumpkin Black Bean Burgers Recipe

There are many flavor combinations that I find extremely appealing. I am often drawn by textures, variety and unusual pairings of unconventional ingredients. Out of all of the mishmash of ingredients I have tried, I am convinced that my absolute favorite mixture is the balance of sweet and savory.

Here are two ingredients that I find work brilliant together….

Pumpkin and Black Beans

The contrast of the sweet pumpkin against the smoky black beans creates an unbelievable compliment to the pallet. I’ve been dabbling with a few recipes that highlights these two things and in my experiment, I came up with a real winner.


Pumpkin Black Bean Burgers
  • ½ Cup of Canned Pumpkin Puree
  • ½ Cup of Black Beans
  • 1 small diced onion
  • ½ Cup of Oats
  • 2 Tbl. Wheat Germ
  • ½ cup of chopped green pepper
  • ¼ cup of edamame (you could also use corn but I like the green stuff better)
  • Cumin, smoked paprika, salt and pepper, parsley



Suatee the onions for a few min until tender. Add the beans and pepper, cumin, and smoked paprika and cook for 5 min. Once the bean mixture is done, let it cool slightly, then add the pumpkin, oats, wheat germ, and edammame. Lastly, add the remaining seasonings. With wet hands, form 6 patties.

Cook the patties in a hot skillet for 3-5 min on one side, flip, and then place the pan into the oven at 350* to finish cooking for about 15 min.


Once, the burgers are done, add your desired toppings. Mine included another sweet and savory FAVORITE….hummus and peach salsa. I also added sliced avocado and romaine.

The great thing about making a batch of these burgers, is that the freeze well too. I wrapped the leftover patties in saran wrap, placed in a labeled Ziploc and popped them in the freezer for another night.

We enjoyed these for burgers for dinner tonight and since I had made them up over the weekend, it was a simple and fast meal that was put together in less than 20 min.

I also made a quick side of sauteed zuchinni with some cumin, smoked paprika salt and pepper and then added black beans and salsa.

Since Toly is not a fan of pumpkin (such a tragedy I know!) I made him an alternative dinner of a chicken club sandwich with waffle fries. (He is so easy to please)

These Pumpkin Black Bean Burgers are a great spin on your ordinary veggie burger. They are also perfect for Halloween with the appropriate holiday colors of black and orange.

  14. Those burgers looked so good! Love your creativity! For a split second, I thought I was looking at M&M cookies. HAHAHA! The edamame looked like green M&M's. It's too bad that Toly doesn't like pumpkin...more for you, right? BTW, his club sammie didn't look so bad either. Have a great night, lady!
