Sadly, the nights of the grill and cool refreshing dinners are dwindling away, and I'm finding myself turning to the fall classics. Casseroles, soups, and of course chili to name a few.
I recently spotted a recipe for Buffalo Chicken Chili that caught my eye. After studying the recipe a few times (which is what I normally do with any new recipe I intend on recreating), I took the inspiration into my own kitchen and came up with my version of....
Buffalo Chicken Chili
Ingredients:
- 1/2 pound of all white meat ground chicken breast (all natural, organic)
- 1 small diced onion
- 1 large carrot chopped
- 1 small green pepper chopped
- garlic, salt, pepper, smoked paprika, parsley
- 1/4 cup of buffalo sauce
- 1/2 cup chicken broth
- 15 oz can white beans
- 28 oz can of crushed tomatoes
First, I browned the meat in a large skillet.
And the garlic, salt, pepper, smoked paprika and parsley
Let this saute for about 5 min, until veggies are slightly tender and then add the chicken broth to scrape up all of the brown bits on the bottom on the pan.
Next, I converted the mixture into a slow cooker and added the remaining ingredients.
Mine was a sweet potato (I swear there is a sweet potato under there) and steamed spinach, topped with avocado, feta and "sour cream" aka Greek Yogurt
Cook on low for 4-6 hours

I decided to serve our chili over potatoes.
Toly had a regular, topped with Cheddar and sour cream

This was incredible!
You could also make this all veggie by eliminating the meat and adding more beans, which I would have preferred; however, I have a hubby that I love and who enjoys some meat in his life. So, I graciously included it and picked around so that mine was more veggie and his was more meat.
I am certain that this will make spectacular leftovers. Perfect for a quick lunch on a cool rainy day (which is fitting because I hear a similar forecast is in our future.)

Ow! I'm def going to make this in two pots- a meaty version for Josh and a beany version for me :) What a fabulous dinner idea. I think you could use the leftovers of this in some awesome quesadillas too! Or on top of a salad.
