Full of Giving (A Prodcut Review and a Recipe)

We are half way there folks…


The weekend is near and just a few more days to clock in before the fun begins.


This week is actually a short one for me. I have off work on Friday because Toly and I are headed to Philly for the weekend. This is technically our anniversary trip because we had scored some tickets to a Phillies game for this weekend and decided to turn the game into a little weekend getaway.


We don’t have any huge plans in place yet, just a fancy dinner on Friday night at Buddakhan (I saw this place on the Foodnetwork a couple months ago and have been dying to try it ever since), the game on Saturday night, and then possibly a much needed stop at Trader Joes. Some other ideas we have are The Reading Market and The Art Museum, but if anyone has any other great ideas for fun things to do in Philly, I’d love to hear them. We may be faced with some rain, so indoor options may be our best bet.

I recently was given the new flavor of Luna to sample…Chocolate Raspberry.


Here are the sats on this guy:
170 cal
5g fat
2g sat fat
27g carbs
5g Fiber
13g sugar
8 g protein
(Pretty similar to most of the other Luna Bars)


The one thing about Luna bars lack is the fact that they are not 100% Organic. The bar claims to be 70% organic, so there are some processed ingredients, although pretty minimal.

The Taste: The bar itself is chocolate with a chocolate layer bottom and then drizzled with more chocolate. Chocolate fans out there would be pleased.



Unfortunately for me, I’m not a huge chocolate girl. I do enjoy it, but usually in small dosages and when something is overly infused with a chocolaty taste, it usually doesn’t strike my fancy. This bar was pretty darn chocolaty. I sampled half and that’s about all the chocolate I could take. It did present subtle hints of raspberry flavors; however, the chocolate seemed to overpower this.


I think I would have enjoyed it more if the bar was just accented with chocolate and had more of a raspberry flavor. But that’s just me, if you are a chocoholic, then this is the bar for you! I think my favorite Luna is still the Iced Oatmeal Raisin. It truly reminds me of an Oatmeal cookie and I do LOOOVEEE oatmeal cookies. ;)

For dinner tonight, I made…


Coconut Crusted Tilapia with a Pineapple/Apricot Dipping Sauce


2 Tilapia (or other white fish fillets)
1 TBL flour mixed with salt, pepper, crushed red pepper
½ cup of light Coconut Milk
¼ Cup shredded organic unsweetened coconut
2 TBL. Whole wheat panko bread crumbs

Dredge the tilapia in the flour mixture and then dip into the milk. Mix the coconut with the bread crumbs and place in a shallow bowl. Press the fish into the coconut and then place on a cookie sheet. Bake at 400* for 15-20 min.


For the dipping sauce:
2 TBL TJ’s Pineapple/Apricot fruit spread
1 TBL Dijon
1 teaspoon of lime juice



Place ingredients into a small bowl and microwave for 30 seconds. Stir to combine and serve on the side of the fish.

For a side, I prepared a 3 grain blend (brown rice, Bulgar and wheat berries) and spiced it up with some fresh spinach, goat cheese, raspberries and blueberries, almonds, lime juice, Pom juice and honey. I also steamed some fresh green beans for me and nuked some corn for Toly.




Coconut and fish are brilliant together. I also use this same recipe for shrimp, chicken and tofu. Works beautifully! And now the sun has gone to bed and so must I.

    I'm not a big fan of that luna bar, either...I prefer the WCMN or the cookies and cream!

  3. that tilapia looks amazing and i love the crust on it. what a nice texture. i wish my boyf liked seafood so i didn't only make it for myself! i haven't see that luna... but i don't think i am missing out?

  4. mmmmmm the tilapia sounds so good! I love coconut and tilapia- perfect recipe (book marking this baby!!)

    I am also not a huge chocolate girl. There are a few Lunas I enjoy but for the most part they're wayyyy too sweet for me. I just bought a lemon one to try.

    Small world- we're flying into Philly this weekend for a wedding (the wedding is actually at the jersey shore though). Hope you guys have fun. If we had more free time (and if you weren't celebrating a special event ;)), I'd say we should meet up

  5. I'm glad I'm not the only non-chocolate fan on the blogs ;) I haven't tried that flavor but my mom has and she wasn't a fan.

    I like the sounds of that crust for tofu! Coconut has won a place in my heart after thinking I hated it for years!

  7. Coconut + fish IS a brilliant combo!! I always am amazed at how similar our tastes in food are.

    Aw, have a blast in Philly! Buddakhan is meant to be amazing! I've never eaten there cuz it's spendy. But great for a weekend anniv get-away.

    Reading Terminal Market is a must-see! The Art Museum is also really nice. If it's not raining, find your way to Old City and just walk around the cobble-stone streets. Lots of fun bars and arty shops (down near 2nd and Market).

  8. Oooohhh, I just bought some organic shredded coconut and was planning on using it for a dessert but now that I read your recipe for the tilapia, I might use it for a savory recipe instead. Thanks, gurrrlll! Enjoy your weekend and your early morning run!
