Move Along Move Along

Hi guys! This week is moving right along, wouldn’t you say?

Does anyone have any exciting plans for the 4th of July weekend?

We actually reserved this weekend with the intention of going out of town; however, those plans got nixed so now, Toly and I have the entire weekend to ourselves. We are going to spend some quality family time together on Saturday with our own Independence Day celebration! We are going hiking in Mt. Gretna for the day and then coming back for our own BBQ in the backyard. Later, we plan to go watch the fireworks on City Island (something that we use to do while dating, so it will be fantastic to re-visit this tradition again).

I am so excited for our nice, relaxing 4th of July. Hiking is one of my favorite things to do in the summer and I am so lucky that Toly also enjoys it. Sammy is also a lover of the mountains and such a little trooper on our long and intense hikes. We have never been to Mt. Gretna but I hear it’s breathtaking; full of amazing waterfalls and great trails. I am so pumped!

Okay, I’m not sure if it’s due to hormones or the side effects of these steroids I am on, but I have felt like the bottomless pit for the past couple of days. Good think I made a huge jass salad to get me through the work day….

This one held some fabulous stuff:

Leftover BBQ tofu
Romaine and Spinach
Cabbage
Cumcumber
Apple
Snap Peas
Avocado
Strawberries
Raspberry Poppy seed Dressing


So delicious! And it kept me full for about an hour or two until I found myself reaching for some Oikos to satisfy my hunger again. Good thing I come to work prepared!

I almost forgot what day it was until I remembered that it was one of the best days of the whole week. Yes, that’s right, it’s Wednesday and by now you have to know what that means. Wednesday Night BFD!! Oh, how I will never tire of this ritual.

On the Menu:

Breakfast Burritos

My wrap had egg whites, spinach, artichokes, sundried tomatoes, goat cheese.
Toly’s had eggs, bacon and cheese.

On the Side:

Amy’s Organic Chunky Tomato (best tomato soup in the world, but of course)



I love how wraps make the perfect sammy dipper. So functional!

I am so excited to end this week and start the weekend. Thank goodness it’s almost over but I still have 2 more jam-packed days of work.

  3. Sounds like you have some fun plans! I love hiking too--my family sometimes vacations to the smoky mountains, and the hikes and waterfalls are so cool! My long weekend plans are fireworks and a family picnic :)
