Walk for the Health of It

Hi guys! How are things on this fine Tuesday?

I am trying to get through this week with a big ol’ smile on my face because one, it’s a short week for me, and two, I just feel better when I smile more, don’t you?

I spent the entire morning running around work, setting up for a seminar, re-organizing, and moving heavy boxes. By lunch time, I was pooped but very glad I had my sensible portion of wheaties (well in my case, kashi, bran, and fiber one).

My work recently began a Wellness Program that features different contests each month to promote healthy lifestyle. Last month, it was Loose and Ton (Weight Loss game) and this month it’s Walk for the Health of it. We were each given pedometers and were asked to log our steps each day. We are judged by each department and also on an individual level. I happened to look down at my pedometer at lunch and saw that I had already accumulated 14,523 steps. Holy cow, I was busy!

I think this is a great idea and see more and more companies instilling these kinds of programs into their workplace. It just goes to show that living a healthy lifestyle should be constant, at home, at work, and all other areas of your life.

Does your office/work have any kind of wellness program or do any kinds of healthy activities?

So after taking 14,523 steps before noon, you can only imagine how famished I was by lunch. I did munch on a stash of grapes during all the running which thankfully kept me from chewing off my arm, but by 12:30, I was very happy to sit down and chow down.

Lunch was a wonderful wrap. Asparagus, Portobello Mushroom, Roasted Red Pepper, Spinach and hummus.

This satisfied my urging hunger quite well; although, I can’t say it did wonders for my pesky little sweet tooth this week. (Blaming it on the hormones ;)

When I was at the store, picking up items for a training lunch this morning, a man was giving away free samples of a calcium chew supplement. I took one, but threw it in my purse and then remembered it after lunch. I decided to give it a try, considering it was chocolate flavored. The little chew was pretty good actually. It tasted a lot like a tootsie roll. I’ve been meaning to buy some calcium supplements but haven’t had a chance to do much research on good products. I’ve been keeping my eye out for the Adora disks, so I think if I see them, I am going to have to snatch a bag. I hear the dark chocolate is really good and they provide a significant amount of calcium per serving.

After work, I met my bf Jen for a walk around the neighborhood. I love living a mile away from my best friend; it makes meeting up for walks so much easier. We strapped the kid-os into the double stroller and completed a nice 2 mile loop while chatting non-stop of course.

Toly went to a baseball game tonight, so I had another evening of solitude. Whenever the boy is away, tofu always seems to enter my thoughts for dinner.

I whipped up a beautiful tofu stir fry dish.

First, I prepped the tofu and then marinated it in a sauce of soy, brown sugar, garlic and honey.

While this marinated, I chopped up a mountain of veggies. Broccoli, Zucchini, Asparagus, Carrot, Brussles, mushrooms. Then I stir fried these until tender.

Once the veggies were crisp and slightly cooked, I added the tofu with the reserved marinade. While that cooked, I combined a little coconut milk and thai peanut sauce and added this to the pan along with some diced pineapple. Let this come together for a few minutes and top with bean sprouts and crushed peanuts. Place the mixture on a mound of baby spinach and vo’ la:

I enjoyed every bite of this bowl. I love mixing fruit and veggies in stir fries- the best of both worlds.

So that’s about it for today. Time to unwind on the couch with my boy (Sammy that is, my other boy is not home)

PS- Congratulations to Alla and Greg (Toly's cousin's from Cleveland) on the birth of their beautiful baby girl, Karina Elizabeth!!! We can't wait to meet her and look forward to seeing you guys soon! ;)

    and my...you are quite the active lady! that's a lot of steps...
    as for the calcium chew, I heard it's still best to get calcium from whole food sources...the calcium in supplements don't help that much...still, it's rather tasty, and you don't feel as guilty eating it cauz it's "good for you." ;-)

  2. What a sweet baby!

    My work sucks (sorry for the negativity, but it's so true - we're desperately trying to move and get new jobs). There are a ton of very overweight women that I work with, but no one is interested at all in health. Even if I try to make a healthy baked good to show that things can be good for you and taste good, if they hear it's healthy they won't go near it. :(

    I don't know if I've known this before (sorry if I've asked before) but what do you do for your job? Just curious! :)

  3. I don't do the calc chews bc they upset my tummy. My work doesn't offer those health incentives, but it'd be cool if they did.

  4. Aww, precious baby!!

    That is awesome that your job has a wellness plan! My boyfriends' company (that he works for) has a great recycling program and rewards for riding a bike to work type thing.
