The Way The Paper Rolls

So, we all have our assorted collection idiosyncrasies, right? It’s funny that as I get older, I begin to appreciate and accept mine rather than try to change them. For example, I have the strong need for direct order in my life. EVERYTHING has a certain place and when something is out of place, I get annoyed. I was just telling Toly the other night, that it drives me crazy when he uses the paper towels and then proceeds to place them back on the holder upside down. He does this 99% of the time but certainly has no idea that they are upside down or that I would even take notice to this insignificant fixation. However, coincidently, it drives him up the wall when I put the toilet paper on the holder the wrong way. But, I truly have no recollection or concern of which way the paper rolls. Weird!?!?

Do any of you have any atypical tendencies? Do you accept them or try to change them?

Well, that being said, now that you all know of our fastidious nature for the paper products in our home to be situated in an exact manor, I will digress on to the events of this typical Tuesday.

Really, nothing exciting occurred. Work, normal. Workout, usual. Dinner, oh wait now there is something to talk about. Haha, who doesn’t want to hear about crazy good food?!?!

I really think that dinnertime is the highlight of most of our days. Not only is it the only time of the day where the hubby and I can sit down for an hour, relax, and talk, but I also get so excited to create delectable meals every single night. Literally, each night is like a blank canvas- there is a WORLD OF POSSIBLITIES when it comes to food and I think sometimes I try to uncover each one.

Tonight was motivated with Mediterranean flavors. I wish I had a name for some the meals I make, but it’s usually just a creation of different ingredients that we both like with some kind of cohesive base.

Let’s just call it

Mediterranean Vegetable Bowls with Shrimp

-From the Bottom up
- Spaghetti Squash
- Baby Spinach
-Sautéed veggies (Zucchini, broccoli, mushrooms)
-Light sauce of cherry tomatoes, white wine, capers, olives, garlic, fresh basil
- Grilled Marinated Shrimp
- Feta


Served with the leftover wine and crusty whole wheat bread.

So much flavor in every bite! The sauce was light and fresh but everything came together so well into one big bowl of goodness. Of course, the feta on top was like the icing on the cake. Everything is betta with feta! Toly told me the other day that he could probably eat a massive amount of just feta cheese at one time and fully enjoy it. Haha, the boy likes his processed, stinky cheeses!

Okay that’s about it for today. Now I am getting ready for Idol. I’ve decided I am on team Chris but my heart will always belong to Danny! :(
