A Taste of Thai

Happy Friday everyone! This week was nice and short for me and I am very happy to be looking ahead at a nice relaxing weekend.

Work was busy busy but it went by fast which is always a good thing on a Friday. It rained for most of the day, but then as soon as I left work, the sun came out it was beautiful outside. I waited for Toly to get home and we went for a nice walk before dinner.

Tonight's meal was Thai inspired. I prepared a pan glazed tofu with the beautiful method of pan searing the tofu until it is nicely browned on both sides and then adding a liquid mixture of soy sauce, veggie broth, garlic and honey. I de-glazed the pan with the sauce and then threw the whole thing in the oven to finish cooking. This is such a great way to prepare tofu, especially for stir fry's.

My veggie fry was a combo of zucchini, red pepper, mushrooms, snap peas, and broccoli. I sauteed the veggies until tender and added some shredded broccoli mix. I then added a peanut sauce (a little soy sauce and some Thai peanut dressing).

I placed some spinach in a bowl, topped it with the hot veggies, tofu, a little juicy mango and sprinkled on some crushed peanuts.
Delicious!

Toly had a little store bought helper tonight. I've seen this Pad Thai mix many times on the shelves but this was the first time I bought it. It was pretty easy to make. I just cooked some chicken and egg in a pan. Boiled the noodles and then stir fried everything together in a little sauce packet that came in the box.



He said this was very good. Definitely not up to par with our favorite Bangkok Wok take out, but it is a nice go-to version.

Tomorrow morning, I am running a 5k in Hershey. It's the Dash 4 Diabetes and sponers the Juvinile Diabetes Foundation. I am meeting my friend Sarah at 8:45am at my old alumni campus of Penn State. She was so sweet to sign up for this race with me as my running buddy. I'm excited to see how I finish because lately I have been impressing myself with speed (on the tredmil) so it will be interesting to see if that same speed ability can last in a race situation. All good practice for my 1/2 marathon coming up.

  1. If you are a Christian, shouldn't God and the Bible be your GPS? I believe that if we stay in His Word and pray and have a close relationship with Him, He will direct us in all our decisions--from the most mundane to the earth-shattering. That's what the Holy Spirit is for. God convicted me of that last year, and I prayed for His discernment on whether or not to go out on a date with someone. I felt Him saying no, although I couldn't put my finger on why. That small act of obedience ended up saving my life. That guy turned out to have a criminal record--including stalking and abusing previous girlfriends.

    I fully beleive that God is my ultimate GPS in life. He provides me with the guidance and direction for my greatest decisions. I feel overwhelming blessed by the gifts he has given, like my husband, my family, my friends, my home, my health...etc. However, there are many choices that I make day to day where I find myself relying on my own sense and intutions and this is usually when I become lost. So you are right, if we look to Him for direction and have true faith, He will never steer us wrong.

    That is truly wonderful that you were able to prevent a terrible situation because you could hear His voice. Some people call it a "gut" feeling but I am with you in that I fully beleive those little intuitions are God telling us something.
