Good Monday to you all.
We had a real soaker today. Non stop heavy rain all day…Yuck! Besides being a bit wet, the day wasn’t half bad for being a Monday. I had mucho things to get done at work, so my day flew by.
Dinner tonight was a repeat favorite from a few months ago, Super Stuffed Sweet Potatoes. Nothing is better than a warm, gooey sweet potato, stuffed with all kinds of goodness.
For my spud, I baked it as normal and then topped it with black beans, edamame, tomatoes cumin and cinnamon. I threw the tater back in the oven for 5 min so the beans would heat a bit. Lastly, a few pieces of diced avocado and a dollop of Fage and this spud was perfect!
I also made a salad- Romaine, purple cabbage, diced green apple, dried cherries and strawberries, walnuts and cucumber with my favorite Pear Champagne dressing. And a pinch of feta on top. :)
The boy’s tater was twice baked and stuffed with bacon, cheddar and ham. I did manage to sneak in a few edamame beans on his plate. When we were in CA, he tried these for the first time and admitted how much he liked them. Yay! Another liked veggie discovery for him. I of course, do not miss a chance to cater to his vegetable likings, since they come few and far between. :)
In the blog world….Jenna has a great challenge for May. I have wanted to try to incorporate more raw foods into my diet and this is such a great way to start. Does anyone have any good ideas for raw snacks or meals? I’d love to hear them.

It's been cloudy & rainy up here over the past few days also - I'm hoping that means sunshine for the end of May!

My fiance is starting to like more veggies also - isn't it funny how guys jut seem to crave different food than us?
Your pup is so cute! I LOVE stuffed potatoes!!! I def modify mine vs. my husbands as well. Beautiful plates and a great meal :)Hope the rain has stopped
