A Chilly Day Calls for A Chili Dinner

Coming back to work after a 3 day weekend is never fun. It’s almost more of a hassle to take a day off, knowing that I will be playing catch up all day upon my return. Oh well, having Friday off was totally worth it, even if I did spend my entire day getting re-organized from everything I missed.

Surprisingly, waking up this morning was a breeze. I jumped out of bed a minute before the alarm went off and was ready to try out my new bday present for my run. The HRM is definitely a cool device. Even though I ran on the treadmill, I still was able to see the accuracy by comparing the readings of each and it turns out, the treadmill is slightly off (which was to be expected). It’s very nice to have the monitor which will keep track of all of my numbers and to make sure that I am keeping within my healthy zones. (It’s very important to me that I am doing everything just right!)

I am planning on using this thing a lot. When I lift, shred, bike, walk…etc. It’s like my own personal mini computer for exercise. How cool?!?!

Today was quite brisk and chilly, so that of course got me in the mood for something warm and comforting for dinner. Chilly nights brings on cravings of chili dinners, so that is exactly what I made. I have an adundance of vegetables (thanks to my wonderful dad) that I need to use before we leave for CA, so you will be seeing a lot of vegetable inspried dinners this week. (Mainly to be eaten by me of course)

For tonight’s dinner, I made a white bean and vegetable chili for me and a Turkey Corn and Potato Chili for Toly. When it comes to soups, I rarely follow a structured recipe. For some reason, I think the best soup is created without measurements or direction. That is one of the best features of this type of meal, just throw everything into a pot until it tastes good…my kind of meal.
If I can remember correctly, I think my chili contained most or all of the following….

Onion
Celery
Squash (green and yellow)
Peppers
White Beans
Kale
Jalapenno
Cumin
Garlic
Cliantro
Parsley
Salt and Pepper
Chili Powder
(Topped with avacdo, green onion, and a dab of greek yogurt)

There may have been a few extra dashes of other random spices or ingreigents, but that pretty much covers the majority. Our piping hot bowls were paired with some tortiall chips and salsa. (The Food Should Taste Good Sweet Potato Chips are my absolute FAVORITE! Please try these if you haven’t yet)

Dinner warmed me up quite well and now it’s time to tackle some more of my b-day cake. This is dangerous to keep in the fridge, so I may be bringing some into work to share before I eat the entire pan (because I probably would). :)
